I tried making these cutlets yesterday n they were delicious
I fried half batch wth rice flour n d cutlets were nt crisp so I fried d remaining half wth panko breadcrumbs
They turned out nice n crisp frm outside n soft frm inside

But since different people have different preferences, I mentioned the variation of making crisper cutlets with a breadcrumbs coating.

I loved this recipe . I never knew you could make brinjal cutlets . Can I bake them. Thank you dear Veena. Hugs from. TORONTO
You're most welcome, Barbara. Yes, you could bake these either with a coating of breadcrumbs/semolina or without any coating. If you choose the latter option, just brush the patties with a little oil first. Bake them at 200 C for around 25 to 30 minutes, flipping the patties after the first 15 minutes or so.
