- The mouth-watering Goan brinjal pickle is one of the most popular Goan pickles. This homemade brinjal pickle is made with the longer variety of dark purple brinjals. The brinjal pickle has an appetising aroma and taste and can add a zing to even a simple meal of plain rice and curry or rice and dal. Besides, I've simplified the process of making it and it doesn't involve any deep frying. So, one more reason to give this hot and sweet Goan brinjal pickle recipe a shot.

Can we store the pickle outside the refrigerator?
Shirish, the pickle will stay good outside the fridge for just around 3-4 days. That's because I've reduced the amount of oil and vinegar which is much more in the traditional pickle recipe. It was necessary to use more oil in the old days. But since we have fridges nowadays, I've demonstrated a healthier version which will keep well for several months when preserved in colder conditions.

Hi, I made this Brinjal pickle today, WOW oh WOW it's fantastic! I am English and live in France, the french on the whole detest curry & spicy food. I have to travel many miles to purchase this pickle but never ever again! Thank you sooooo much for your recipe, had to use 8 TBsns, demerara sugar (french do not have dark brown sugar) + 1 heaped teaspoon of treacle to replace the jaggery and to give good colour, it worked amazingly well. Many thanks again xx For anyone who's interested half a cup of oil/vinegar is 120 ml.

It's and old favourite of mine and brought back memories of over 50 years ago , when I consumed countless jars of Ferns brinjal pickle ! Unfortunately, this soon went off the market and nobody else seemed to make something similar .
I purchased a book by a Goan lady and tried out her recipe ... the cup she used seemed to be much smaller than the standard 240 or 250 ml measuring cup I used ... the result wasn't what I expected !!
An English teacup is huge !
So it's always good to know what measures used before making any new recipe !

A nice & easy, flavorful pickle. I made this pickle for the first time two months ago. It's delicious. Daly only lasted two months so making some more tonight. It's as good as Pataks Bringal pickle. I do not exaggerate An excellent recipe.

You could have used rinsed water which contains salt, turmeric and some flavour of brinjal.

Thanks, Mohammed for getting in touch. But let me explain about the brinjal water. The brinjal water is slightly bitter and being a pickle recipe, we have to avoid adding any moisture to it as far as possible. That's the reason for discarding it.

Wow Veena. Mouth-watering, finger-licking brinjal pickle! I always thought that the preparation of this pickle is very complicated, but your video makes it look so easy. It also appears to be less oily than the commercial products. I am a Goan who has never made any pickle, but your video has inspired me to try brinjal pickle which is a favourite in my family. lace covered tables and beautiful vintage crockery and of course the beautiful blue and white Azulejo tiles gracing kitchen walls and door fronts..... Ma' am while you cook could you please take us on a home tour of your place, share anecdotes of rare pieces in your house, ancient kitchen appliances which still are valued, people who you come across daily and are an integral part of Goa 's Portuguese ancestry,... like the rousing , early morning call of the Goan pao seller........your personal insights into Goan culture will be a delight to absorb.

Mam your recepie is the most easiest without grinding. Please let me know by adding vinegar i mean half cup wouldn't it become sour.

You need to add that much vinegar for the quantity of brinjal in the recipe, Merlyn. In fact, I've reduced the oil and vinegar (from the traditional recipe) because for this recipe, the pickle has to be stored in the fridge and so there's no need for extra oil or vinegar. Keep all the ingredient proportions exactly as they are in my recipe.
I prepared, and it came out YUMMY!!! Madam, do they add apricot also to this?
Thanks for your appreciation and so glad your pickle turned out great. But no, apricots are not added to this brinjal pickle. In some pickles, like my raw mango pickle, raisins are added to it.

Looks so yummy. Would definitely love to try it. The only thing is I will not be able to get the long thin purple brinjal in chennai. But we do get the big thick ones which are used for baingan bhartha.
Glad you liked the video, Shashi. Unfortunately, the fat and large brinjals have too many seeds and are too thick. The tiny dark purple brinjals could be an option, though. You could also try cutting the large brinjals into quarters lengthwise and then slicing off the part with seeds on the top of each slice. Then cut each quarter slice lengthwise into three parts and take it from there. That should work.

Ma'am I want to know now monsoon season have started so how u can dry the brinjal if v keep under the fan it vl b come dry
Sunita, in the monsoons season, you could spread the brinjal pieces in a baking tray and then dry them in the oven at 120C for around 10 minutes. After that, air dry the brinjal (no need of having a fan on) for around 2 - 3 hours.
