    This could be the best lemon pickle you could have ever come across. Here are two ways to make delicious Goan lemon pickle or lime pickle.     Simply love your pickle. I grew up seeing my grandmother and my mum and older sisters making pickles...we reach out for the pickles...to complete our meals. I collect recipes of pickles and pass onto my sons and now grandsons and pickles like yours is priceless....thank you so much my dear❤🎉

    What can I do If I fermented my pickled lemons for 2 weeks and can see that the peel isn’t soft. This is probably do to the weather being cold and I may have selected lemons that were too thick. This was the non steam version. Can I steam them to make them soft then ferment once more again. Hoping I can save it.

      @@nejolo9563 Lime peel softens in just 5 to 6 days. But you have to use the thin skinned or kagazi limes.

      Rajani, Stuffed pickle is another kind of lime pickle. This is the kind of pickle my mother and many other Goans in South Goa make. My mother even made this with id limbus.

      @@cinthiapereira3668 Cinthia, the first method is not the traditional method. It is a quicker version for those who want to make the pickle in less time. I have mentioned that. I have also mentioned that the second version is the traditional version. and that's exactly how my mother made it.

      @@rekhaachrekar667 Rekha, in pickle making, vinegar adds to the flavour, but it also acts as a preservative besides hindering the growth of bacteria. So, this recipe needs vinegar.

      Mine didn't, Lavina. I can't understand how yours did. Perhaps you boiled it a little bit longer? Also, even if your pickle did, it could be very slight. Because salting the pickle pieces gets rid of the intense bitterness. What you were left with could have been a natural aftertaste. Once the pickle matures it develops its characteristic taste. There's nothing to be done afterwards.

    For sweetening why not use jaggery instead of sugar!?

      Yes, JK, you could surely use jaggery in place of sugar. But see that it is grated fine for it needs to dissolve quickly. Also, if using jaggery, you'll have to add around 20 to 25% more of it by weight as compared to the weight of sugar mentioned in the recipe. I have a quick lime pickle and lime crush (super delicious) here. ruclips.net/video/WeHE80PskB4/видео.html
      The lime crush is easier to make and can be enjoyed right away. For the lime pickle you have to give it time to mature and also make sure you don't boil it for more than a few seconds , or the peel will turn a little firm.

    Instead of sugar can i use jaggery. Please let me know

      Yes you can, Dulcine. But you'll have to increase the weight of jaggery as it is less sweet as compared to sugar. For method 1 you could add 320+ 80g + 400g jaggery to start with. At the final stage when the pickle is ready for use, if you taste the pickle, and you find it needs more sweetness, then add 2-3 tbsp of finely grated jaggery directly into the pickle, stir it well. Keep aside for 2 days. For method 2, you could add 280+70g=350g jaggery. Adjust the taste at the end if necessary. Hope this helps.

      Veena the limes are very expensive now, will have to wait for the monsoons when they will be cheaper. Will keep the recipe I'm my folder.

    Cooked for half and hour, the peel is hard and not soft

      The pickle has to be cooked only briefly, Zohra. That's an important step. If you cook the peel any longer like in many other recipes, the peel could harden. Please follow the recipe exactly.

      You're right, Shanaz. But that is just one meaning of the word. Open any dictionary, and you'll find the other meaning of vessel is bowl or container.
