Some brands are nasty, others great. I like Daiya shreds (cheddar, mozzarella ,plus some 4 cheese blends and others). Follow Your Heart makes a great sliced smoked Gouda and feta crumbles. Violife has a nice hard parmesan wedge but their other kinds I've tried tasted like chevre, which I hate. I discovered using Daiya cheddar then grating Violife Parm on top smells and tastes a lot like asiago on my baked pasta dishes. Tofutti makes a great sour cream and cream cheese. So Delicious dipped salted caramel bars are to die for. Especially if you give them 15 minutes or so to soften.

I wonder if there's an adequate substitute for the vegan cheddar cheese, as that is the most expensive ingredient by far. Looks delicious! I love vegan food, but am not vegan or vegetarian.

Greetings from Bangalore, India. I am not a vegan or vegetarian. But our cuisine incudes lots of vegetarian and vegan food by its nature. We use egg plants extensively but these patties add a new dish to our menu. It is easy to customize this to our taste with some spices of choice added. Probably replace bread crumbs with fine semolina. I have never tried chickpeas crumbs though. These would make a good snack and look diet friendly too. Thank you for this video. Surely will make these patties.

@@khushii1978 meat patties are different from lentil / veg patties. In texture and taste. Obviously. Both base ingredients are totally different. They are different dishes, period. I like both for what they are, but I eat meat or chicken very sparingly. Here we don't eat them every day. And I don't substitute one for another. Veg / lentil patties are much lighter on the stomach, rich in fibre therefore easy on the digestive system. (They can cause gas if not accustomed though). Actual taste also is customized by adding different souces and secondary ingredients like onions, garlic, chillies, herbs etc...
@@oreogiri thank you for your prompt reply. yes I gathered as much. the only reason I asked was because the title compares it with meat. which should be done only if one feels some characteristics are similar. but since they are two different foods with their own identity, I don't think comparing is right. both are good. period. it's individual preference. I am a non vegetarian and as such was curious. and eggplant is one of my favorite vegetables
To wet ... Need to ring dry or at least strain and press out oil and water from the cooked eggplant. You could even slice, salt and let it sit on a rack to get out the water if you don't get the water out before or after cookie or but it won't be a firm patty

Me too..... As grown up in Switzerland, I can't leave "real" cheeses and chocolates. 😊 I have my vegan days and vegetarian days, this way I don't miss anything, and I try all kind of vegan products. Some brands are nasty, others great. I like Daiya shreds (cheddar, mozzarella ,plus some 4 cheese blends and others). Follow Your Heart makes a great sliced smoked Gouda and feta crumbles. Violife has a nice hard parmesan wedge but their other kinds I've tried tasted like chevre, which I hate. I discovered using Daiya cheddar then grating Violife Parm on top smells and tastes a lot like asiago on my baked pasta dishes. Tofutti makes a great sour cream and cream cheese. So Delicious dipped salted caramel bars are to die for. Especially if you give them 15 minutes or so to soften.

Then add the soaked chickpeas in to food processor and pulse it but not to puree. Then spread the chickpeas on baking tray and bake them for about 20 minutes. Then transfer the baked chickpeas in to food processor ones again and pulse it again a little bit. Store chickpea crumbs in a glass airtight container for cooking your delicious food. Greetings from Bangalore, India. I am not a vegan or vegetarian. But our cuisine incudes lots of vegetarian and vegan food by its nature.
We use egg plants extensively but these patties add a new dish to our menu. It is easy to customize this to our taste with some spices of choice added. Probably replace bread crumbs with fine semolina. I have never tried chickpeas crumbs though.
These would make a good snack and look diet friendly too.

@@khushii1978 meat patties are different from lentil / veg patties. In texture and taste. Obviously. Both base ingredients are totally different. They are different dishes, period.
I like both for what they are, but I eat meat or chicken very sparingly. Here we don't eat them every day. And I don't substitute one for another.
Veg / lentil patties are much lighter on the stomach, rich in fibre therefore easy on the digestive system. (They can cause gas if not accustomed though).
Actual taste also is customized by adding different souces and secondary ingredients like onions, garlic, chillies, herbs etc...

To wet ... Need to ring dry or at least strain and press out oil and water from the cooked eggplant. You could even slice, salt and let it sit on a rack to get out the water if you don't get the water out before or after cookie or but it won't be a firm patty

¡Hola! ¡Gracias por visitar mi canal de cocina y por tu pregunta! Aquí usé una salsa muy simple: mezclé salsa de tomate con un poco de sritacha, ¡ya que a veces me gusta un poco picante! También recomiendo encarecidamente la siguiente salsa para mojar estas empanadas y cualquier otra que hagas: una salsa tzatziki hecha en casa a base de plantas, mezcla yogur sin lácteos, un poco de sal y pimienta, ajo picado, pepino rallado y perejil o eneldo picado. Puede usar yogur natural sin sabor lácteo normal si no es vegano y lo prefiere en lugar de yogur de origen vegetal. ¡Ten un día maravilloso!

Hello! Thank you for your comment and visiting my cooking channel! To make chickpea crumbs you need to soak dry uncooked chickpeas in water for about 18- 24hrs. Then add the soaked chickpeas in to food processor and pulse it but not to puree. Then spread the chickpeas on baking tray and bake them for about 20 minutes. Then transfer the baked chickpeas in to food processor ones again and pulse it again a little bit. Store chickpea crumbs in a glass airtight container for cooking your delicious food. You can substitute chickpea crumbs for bread crumbs but I usually make chickpea crumbs as I like them a lot and use in different dishes. Thank you ones again and have a wonderful day!
