  • Welcome back to my channel! Today I made for you my version of latin style roast chicken. It's very simple to make and very flavorful!
    Here are the ingredients:
    5lb roasting chicken
    1/4 cup olive oil
    10 Garlic cloves
    2 tablespoons of Adobo

    my bf is Puerto Rican and I made this for him and it came out so good,now I'm obsessed with Puerto Rican food and surprisingly is Very similar to alot of African dishes now he wants it 3 times a week....being new to pR flavors (I'm East African from Uganda) your videos are a God send....thank u for sharing ur recipes.

      Great easy recipe. It’s similar to our Venezuelan roast chicken. I normally marinate the chicken for the day, befor roasting.

    I marinated the chicken as instructed. The only difference is I smoked the chicken on the grill and it was a hit. Thanks.

    I made the marinade did exactly to the word of your recipe. The chicken baked in about an hour and thirty minutes, and It was absolutely delicious. You really should make a cookbook, I hope you never disappear from here your recipes are like what I grew up eating living in Brooklyn. Not only do you make it look easy it is easy and so simplified. Thank you so much for sharing such great recipes...

    Made this a few months back and it was a big hit with my family. During the last 45 minutes I put onions,potatoes,carrots and celery under the Chicken to soak up all the juices. Thank you.

    OMG I made this roasted chicken, after I put the marinade on the chicken my 8 year old grandson said to me nana it smells so good. When dinner was ready I called him upstairs that dinner was ready. He hit them stairs and litterly ran down the stairs before I was finish. The chicken was incredible. The whole chicken was gone the next day between 3 of us. I also made your chicken stew it was so delicious. I love your videos. I have also made the safrito, adobo, Sazon and rice and pigeon peas. Also delicious. Have you put out a cookbook yet. If not you need to. Can't wait to try your other recipes

    Ida i made this chicken today, and its so good the only thing is i skiped the vinegar because i forgot it lol and i added some sofito it was great!! Never thought i can make a whole chicken :) now i can.

    i did this with thighs...on sale....marinate over night...sous vide at 140 for a couple hours then the grill...outstanding.. i am writing down the marinade...

    Ever since I followed this recipe I never made a whole chicken whole again. I must cut it in the middle from now on. Only thing I did different was I used sofrito for the mojo and stuck to my usual powders as I don't always have fresh garlic and also added the Sazon to the Mojo as well. After marinating overnight I let sit to room temp and put in oven without adding more seasonings as I used a lot on the mojo. Finally I cooked it at 450° for 40 mins then uncovered for 20 mins or more depending on the birds size. My chicken look just like yours and tasted heavenly. I ate the onions too as I'm a cooked onion freak! I immediately uploaded to my IG page to show it off 😋

      I so messed up
      I used half a. Hi chicken n when I brought the sauce it turned white . ??? Idk if the chicken had too much water or maybe too much oil bc it was half a chicken but it was odd I will try again

    I made my own rub like you did. Instead I cooked it in a baking bag. Cooked for 1 hour 25 minutes. It was simply amazing. The seasoning is everything. The meat was falling off the bone and the flavor was out of this world. Thanks again for sharing this recipe I'm 2 for 2!

    Hi Ida, I tried this recipe and OMG, it turned out WONDERFUL. The aroma of the seasonings marrying the meat was out of this world spectacular!. And while it was roasting in the oven, words cannot express how my mouth was watering in anticipation. My family and I devoured it that same night.     Cooked this for Thanksgiving and the taste was amazing. In my stupid Apartment oven it took longer than one hour at 350. It actually took total cooking time 2.5 hours. But it was so good. Now that I know my slow garbage oven takes so long to cook I'll leave it covered for longer! Thanks again!.

    When you cut the chicken before you seasoned it is called spatchcocking. We do it all the time. We even spatchcock our Thanksgiving turkeys & cook them on the grill or smoke them.

    I'm definitely making this version on sunday. I cut potatoes and put it around the chicken. It soaks up all the flavor. I also do the onion technique when I roast chicken and I eat them along with the potaoes. They are delicious.

    Hahaha i like that "Butterfly" Roasted Chicken. I always loved Pollo Chicken, yet I used to always wonder why Pollo Chicken was so yellow as well lol. Now i know which spice really does it. It's not messy that you make a little mess seasoning the chicken because if you do it right it will be a little messy seasoning it up right as that's how i do it thought to me by my Grandma as well from the islands. It's just that many other people don't know how to season their meat and so theirs often with no flavor from lack of real seasoning or from freezer to oven with NO seasoning flavor. I love me that Chicken!

    Question, you said it took one hour in the oven, then for the last 25 minutes you uncovered it, so was it a total of one hour in the oven or one hour plus 25 minutes?
