You could replace the egg in this recipe with three tablespoons of plain, unsweetened Greek yogurt, or three tablespoons of aquafaba - this is the liquid from a can of chickpeas, reduce it first to half a cup total volume and let it cool. It's an excellent egg replacement used in many vegan recipes. The yogurt works well too though.

..apart from the quality of your eggs, some people are quite sensitive to the smell of eggs. What you can do is to add a little lemon or lime zest...or you can add a little grated nutmeg. That will take care of the scent but the flavour of the baked goods might change a bit

If you bake them a little longer then stated in the recipe, they will be more crisp.

Egg smell is likely due to the quality of your eggs. Eggs shouldn't smell.
