I have been making these candy cane cookies for over 30 years! My daughters favorite! Got the recipe from my mom ! Who made them for me! 👍🏻
Note: I also make wreaths - coloring green , making a round circle w/ overlapping ends …I add crushed peppermint candies mixed w/white sugar or even powdered sugar to make it look like snow!

Happy Holidays to you and your family. I thought of since you mentioned about peppermint flavor, my guess is that after you add the vanilla extract first, divide the dough, then add the peppermint extract and red coloring. That's an idea.

Yes, you could use granulated sugar.

I loved the candy and cookie minus the peppermint extract. Glad you used vanilla and almond extracts. People use too much peppermint extract and it overpowered the cookie.

@Michele Capozzoli…I put the sugar on after the cookies are out of oven. I use white sugar, crushed peppermint & confectioners sugar …separately or all together!sprinkle a few tsps. On w/a dinner spoon, while cookies are still very warm.
