Ingredients (6” round mold):
Raspberry jelly
130g raspberry
30g water
24g sugar
40g water
4g gelatin
Lychee cheesecake
120 g cookies
60 g melted butter
300g cream cheese
60g sugar
120g sour cream
45g lychee syrup
7g gelatin
300ml heavy cream
30g sugar
Lychee jelly
100g lychee syrup
10g gelatin
200g lychee syrup
lychees

Beautiful lychee raspberry cheese cake. Can we use fresh lychee as lychee season now? Instead of heavy lychee syrup, what can we use?
What is that side lining that you used so can extend the height of tray for lychee jelly? Where can I buy?

Hello Ann,
You can use fresh lychee :)
Here is the recipe for the Lychee syrup:
300g lychee (pitted)
500g water
100g white wine
100g sugar
lemon slice
Shimmer for 5 min, then cool overnight in fridge
The lining is silicon: amzn.to/30mI9Zk Just cut it in 1/2 or as needed.
Make sure to use fresh lychee (pitted) for the gelatin not the ones you boiled.

It looks like they used two silpats (silicone baking sheets) to extend the springform pan. Silpat is a brand name from France; they have those fibers embedded in the mat to reduce stretch. You should be able to find silicone baking sheets anywhere from WalMart to Williams-Sonoma, but if you want Silpat brand they are pricey! Regardless of the brand, the silicone is non-stick so you don’t need to oil it.
