- This Lychee Agar-agar Jelly is so refreshing and looks very sweet and pretty. For this recipe, I used fresh lychees, but you can use canned lychee as well. If you can get hold of fresh lychees, I highly recommend trying them to enjoy the natural lychee flavour.
Ingredients:
Pink Layer:
5 grams agar-agar powder

4 grams instant jelly powder (can substitute with 3 grams agar-agar powder)

800 ml liquid (water, room temperature + lychee juice)
120 grams sugar
1-2 pandan leaves
2-3 small pieces dragon fruit
500 grams fresh lychees or 1 can lychee

Ah I see. Most of my recipes have no cow’s milk ! My nephew is my no.1 jelly fan and he is lactose intolerant so my recipes use mostly coconut milk 😅

I made it and it was indeed delicious and ethereal looking … but I think 8inch by 8 inch pan is loo large and the opaque layer was a tad too think ! I am going to try with 7 inch square next week ! Thanks! I appreciate your recipe and so do my family and friends !! 🌸💜🌸💜

Hello 👋 thank you ! You can use 120 ml lychee syrup + 680 ml water for the liquid. The rest follow the same. I used 7 inch mould.

Lovely soft pink. Which brand jelly do u prefer? The swallow brand has a bit of unpleasant smell.
Oh I didn’t notice the smell 😅 both the same to me just that the pearl mermaid brand is cheaper 😆 but if I have a recipe that uses 10 grams I’ll just use the swallow brand one cos it’s exactly 10 grams.

I like this recipe. If you want to take it to the next level. Add a little bit of salt and mint inside the lychee. It’s a bust of flavor and surprise.

Hi texture wise it’s similar, but konnyaku jelly is made with a high percentage of konjac which is a root plant. As for the instant jelly powder, it also has some composition of seaweed. So overall results wise , the jelly will turn out more clear compared to using konnyaku. Nonetheless it’s a pink jelly so I don’t think it should matter ☺️

@gel74 yes sure but personally I prefer one clear jelly layer and one coconut layer then you get the flavours of the lychee on the clear layer

When adding the coconut milk layer, is it ok to pour it over the lychee jelly layer when it's still hot with steam? Or must wait till the coconut milk layer is in room temp?
Hi, not sure how I missed your question. Yes pour over when it's hot. When it's not hot, the layers won't stick

Soo pretty. I tried but the white layer just slide out from the pink. How do i keep them together?
Hello thanks for trying ! Yes it’s quite tricky to get it to stick well. Don’t let the pink layer completely set. When you see a firm film at top of the liquid ( when you touch it it will bounce back) pour the white layer.

For the top part of the jelly, if I use the liquid from canned lychees instead, do I still need to add sugar to the mixture?
If you are afraid it will be too sweet, then just add a tablespoon of sugar to mix the instant jelly and agar-agar powder. After the liquid boils, test the sweetness, then add to your taste

Did you wait for the coconut layer to firm up before putting into the fridge?
You can place it straight into the fridge. I usually wait until it reaches room temperature so that it doesn’t use up too much energy for my fridge.
Can i use strawberry milk instead of adding dragon cube for volour?
Hi yes you can use just that if it’s milk than you won’t get a clear jelly .
If I can’t find instant jelly powder, can I substitute with other ingredient?
Yes you can substitute with agar-agar or jello or gelatin but the texture will be different

Hi Ruyi, I tried making your lychee santan jelly. Not sure what went wrong? The base clear jelly was too soft. I followed your recipe to the “T”. Adding both agar agar powder (5 grams) and (3 grams) instant jelly powder. 5 grams I measured with 1 teaspoon and 3 grams was slightly less than 1 teaspoon. Is it because the powders was too little? Thank you for replying.
I’m so sorry to hear that it didn’t go too well. Yes you will need to increase the powder. Sometimes different brand have different liquid to powder ratio. Next time after it is cooked scoop up some into a small saucer. Place in the fridge for 5 mins then test whether you like the consistency
1 teaspoon is about 3-3.3 grams so yes most likely not enough powder

How long does it need to set so we can put the coconut milk in? Because I waited at least 30 minutes and none of it is solidify
Hi it usually solidifies within 10-15 mins. The agar agar powder solidifies easily at room temperature. If it does not solidify within 30 minutes, then probably there is not enough agar-agar powder. (For some brands the powder to liquid ratio is different) Then you need to add more powder to the solution. Mix it well and boil again.
@@ruyijelly what if we did not add agar powder just gelatin?
I see gelatin does not solidify at room temperature. Follow the packet instructions for the powder / or gelatin sheet to liquid ratio. You have to place it in the fridge or freezer. Usually fridge 4-5 hours. Freezer 1-2 hours. Then once it solidifies add the coconut layer and place in the fridge. I’m not very experienced in gelatin so I’m not sure if the two layer will stick well.

How do you measure 3g of agar powder? Because the powder very light.
Hi yes it is quite difficult. 1 teaspoon is about 3 grams. Hope this helps

Just to clarify you mean “agar-agar powder” it’s just more convenient and dissolves quicker. Texture wise the agar strips is more stiff.
