I love raspberries! And such a coincidence, today I was looking for one piece of red berries pie in a grocery here near home, but I didn't find it. Then I came here and I what I see?
How not love this beautiful raspberry cheesecake? =) Is there a reason why the cream is whipped up 50%? I always thought whipping it more would make the mixture more airy. PS. The steamed towel is such a good trick!
Kind of a late reply, but pre-whipping the the cream us to make the cheesecake structure more stable. Pouring in in then, then taking the time to mix sould make the cream cheese too soft
RUclipsfreak if you watch closely, you can see that when they put the plastic mold in the middle, they pushed it through the crust ! So when they took the cheesecake out of the mold, the center crust stayed behind :) hope this helped !
Also I have a question. Will this rise in the fridge? For whatever reason, despite using the same amounts of everything, my mixture ended up being a lot shorter in the pan.
It doesn't reach the soft peak stage (still very smooth and liquid), whip it by using a whisk or hand mixer. You can see it from the texture on the video.

When you made it, what did you use as the "digestive cookies"? I'm not sure what that is
@@hecate9257 a digestive cookie is the same as a Graham cracker or anything close to that that you're able to dunk and can easily fall apart or break

whipped the whipping cream a little bit thin about wipped up 50% with the hand mixer~^^
