My mom from mallorca never uses olive oil in churros. Vegatable or sunflower oil. The pastry has to be very thick and make sure no air pockets. Oil temperature has to be high. Quick fry
Roger Vallve olive oil is to expensive for venders to use it also so not authentic
Saoirse dent olive oil is not that expensive though, I don't know if you're from Spain, I've seen it's crazy expensive outside Spain but not that much here. In any case, I feel like olive oil is more tasty than sunflower oil and churros need to taste softer for the chocolate to taste stronger.

i added vanilla sugar and quarter of teaspoon of orange blossom water to your recipe and the result is just wow, but even without that this might be the best churros recipe on youtube, ive tried other recipes with butter, eggs .... etc and the result was a t best ok if not desastrous

A good cheap snack if you're low on ingredients! I used canola oil instead of olive, added some sugar and vanilla to the dough mixture and some cinnamon to the caster sugar.... it tasted really great!!!😋😋😋

In the old days all they had was olive oil in Spain so it's the most authentic way

+Kathleen Melendrez Hello there, you could bake them in the oven, but the result will be different from the fried counterpart. We would suggest arranging the churros on a baking tray lined with baking parchment, sprinkling with a little water (this will result in steam) and placing in a preheated oven at 200 C / Gas 6 for about 15 to 18 minutes. Switch off the oven and allow to cool in the oven for 10 minutes before removing, dusting with sugar and serving.

I've tried this recipe and yes, it came out crispy and delicious! 👍🏻👍🏻 But one question : they absorb so much oil after frying eventhough i already put them on tissue paper..i wonder what did i do wrong?
Nothing, churros are greasy food. Fry them in very hot oil. I would suggest not adding oil to the dough, nor baking powder, the original recipe does not use either.
Lille late but😂 it’s most likely that your oil was not hot enough - frying can be very tricky. too hot and the outside burns while the inside is raw, too cool and your dough becomes a sponge. Too see if your oil is hot enough try placing a wooden spoon and seeing if little bubbles surround it-that means it is ready hope that helps😊

I can see that I have not explained myself well enough. When I mentioned ( not to fry with olive oil ) I only meant it for churros Mr. Disco. There are plenty of other things olive oil is perfect for frying.

Is the key to preventing mushy churros, using baking powder? I have seen recipes that use eggs instead too. How do you prevent mushy churros?

Isn't it bad to fry with olive oil because of its low smoke point? Maybe a different oil?
+Evelyn Dominguez Extra virgin olive oil actually has a smoke point of 207 C (405 F). This is suitable for deep frying. The key is to use high quality extra virgin olive oil. You can actually recognise low quality olive oil by the fact that it has a lower smoke point!
Or simply use vegetable oil instead

We wouldn't recommend baking the churros in the oven, though you're free to experiment!

PS, another thing I did not make clear was that if lemon juice and zest was used in the dough mixture ( no cinnamon or other toppings are needed ) just sprinkle sugar on top. You can do the same with orange zest.

The recipes with butter and eggs are the mexican churro recipes. Mexican churros are more spongy inside, like a pastry. Spanish churros are more chewy. The taste will probably alse be affected. Spanish churros have a more neutral flavour and the main flavour will be the one of the oil you used to fry them. A nice exrtra virgin olive oil is best there.

Ok, just mailed the recipe to the new people who asked, I know it's common sense but I'll say it regardless. Because you are using very hot water to mix with the flour, unless you have a stand mixer please use gloves. Also, don't add baking powder, this is a churro not a cake, and regardless, it's going to be fried not baked.

Just returned from Spain, and these churros were not good at all; sorry. They tasted like crunchy olive oil sticks. Good thing I only made half the recipe. I will be looking for another recipe.
U shouldn't use olive oil AT ALL it's unhealthy and dangerous to boil it or fry with ! U better use sunflower oil or canola 👍

To Mr. John Brockway, your churros are crunchy on the outside and raw in the middle because when you fry them, the oil is too hot to start with, cooking the outside faster than the inside. There's no point in adding baking powder, it activates prematurely when you drop it in the water.
Actually most baking powder sold today is double-acting baking powder. This means it reacts twice: once when mixed with liquid, and another time when exposed to heat. Therefore the baking powder will indeed activate when the churros are added to the hot oil.

There's also really no need for it. THe original recipe only has water, salt and flour. no need for baking powder or opil in the dough itself.

not true, a pump is NOT necessary! You can pipe with a large tip and piping bag...
you technically can, but with this kind of dough, it's easy to leave air pokets that can make the churro blow up and spray hot oil during frying. The pump allows for drawing out the air better, due to the increased preasure.

Had Churros in Spain a number of times where they make them in front of you in the markets and this is not how I've seen them made. Cooking a sweet pastry in olive oil, really? Also, where are the eggs? Adding the baking powder to the water will do nothing for the pastry, it's affects are activated by heat so you need to add it to the dry ingredients first so it can do it's 'thing' when the Churros are cooked.
Not sure where in spain you saw them making churros, but extra virgin olive oil is a must and they dopn't have eggs in them. Eggs (and butter) are for mexican churros, not spanish ones. I do agree on the baking powder, though. Just skip it, it's not needed.
Sorry I tried this recipe and tried to adjust it and it was so heavy. I already knew it wasn’t authentic... wasn’t good at all.

Spanish churros lol and seriously from the UK. This isn't at all and authentic Spanish recipe because I'm hispana and this is not at all how they're made. Least of all fried in olive oil !!!
This recipe was developed and the video was filmed in Spain. Frying in olive oil is common throughout the Mediterranean. Of course churros in Spain can differ greatly from churros elsewhere.
I'm also spanish myself and churros have always being fried in olive oil in my house. Maybe most people prefer to use cheaper oils but using olive oil doesn't make this recipe unfaithful at all.
