PS - I do like that fact that your titles are *FACTUAL.* Unlike a lot of other cooking videos who say _"Make bread in 10 mins!"_ But when you watch, once you've made the dough which takes about 10 minutes, you've got to let it rest for 30 mins for it to rise. Then re kneed it and leave for another 30 mins before you can cook it which takes 25 mins. So 10 mins normally ends up being over 1 and a 1/2 hours and NOT the originally stated 10 mins. Or others who say _"make these with just 3 ingredients."_ At the end of the video, they've used about 9 of which 6 are ones, no one would normally keep at home 8-))...

Stop deep frying in a flat bottom frying pan. Use a wok or an Indian kadhai instead. Thanks to the curved surface of a wok/kadhai, you can deep fry using far less oil while still getting much more depth to fry in. So, it's much more efficient and far less wasteful. Not to mention, frying in a wok is also safer, since you're dealing with lesser quantity of oil and less chance of splashing.
Maybe you can school me on this. Exactly what is the purpose of sifting the flour? I see some recipes can't live without sifting and others seem to turn out good without... you sifted then go on to making a pocket by squishing to flour aside.... at the end the dough was kneaded into a big clump squishing the flour together?
Hello, the purpose of sifting is to avoid flour lumps, this should be done if your flour has been lying for a long time or its quality is doubtful. If you have perfect flour, you don’t need to do this! 😊
Take some flour and drop it in water without sifting, you'll see that the water coats the outside of any clumps, but you can reach in and grab clumps and crumble them in your hand to find dry flour inside the clump. Kneading the dough does break up the clumps usually, but sometimes you miss some, or it mixes unevenly and you get some areas of wetter dough, and some drier. Best to start with the sift for better consistency. If you don't have a sifter, you can put the flour in a large bowl and whisk it for a bit while dry before adding it to the water, but the sifter is more reliable.
Sifting makes the flour airy and lighter. If you spoon it into a bowl without sifting, the end result after kneeding will be tougher. Basically, sifting incorporates air into the flour giving you a softer dough.

Maybe you can school me on this. Exactly what is the purpose of sifting the flour? I see some recipes can't live without sifting and others seem to turn out good without... you sifted then go on to making a pocket by squishing to flour aside.... at the end the dough was kneaded into a big clump squishing the flour together?
Hello, the purpose of sifting is to avoid flour lumps, this should be done if your flour has been lying for a long time or its quality is doubtful. If you have perfect flour, you don’t need to do this! 😊
Take some flour and drop it in water without sifting, you'll see that the water coats the outside of any clumps, but you can reach in and grab clumps and crumble them in your hand to find dry flour inside the clump. Kneading the dough does break up the clumps usually, but sometimes you miss some, or it mixes unevenly and you get some areas of wetter dough, and some drier. Best to start with the sift for better consistency. If you don't have a sifter, you can put the flour in a large bowl and whisk it for a bit while dry before adding it to the water, but the sifter is more reliable.
Sifting makes the flour airy and lighter. If you spoon it into a bowl without sifting, the end result after kneeding will be tougher. Basically, sifting incorporates air into the flour giving you a softer dough.

If your flatbreads are coming out wet, try using a little more flour while kneading the dough. It should help absorb the moisture! 😊
