I love these recipes. I live in the US and this is the first time I've used gobu at home. My market carries it fresh, so I got two large stems and made the two salad recipes. So easy, healthy and tasty! 🥢

I made your Kinpura Gobo last night, and it was amazing! Today, I just finished making the Gobo salad. It is soooo good!! I made almond mayonaisse before and used that in place of the mayo.I saved the center for stock making as it was too tough, and was the reason my Kinpura Gobo dish was tough. My salad is not tough, so I cannot wait to try the Kinpura Gobo again tomorrow without the tough center! I served the Gobo salad on hot vinagered rice, and place avocado pieces and a few cherry tomatoes on top. So delicious!! Thank you for the great recipes!!
I just bought this root on a whim when my girlfriend and I were visiting Mitsuwa Market near Chicago, IL. Thank you for posting such simple, easy to follow recipes for me to try!
No, not anymore.... no need to soak or peel its skin. Soaking gobo makes very dark water which is thought it is bad stuff have to remove. But now finding out that dark color is actually polyphenols (antioxidant). All nutrients contain in the skin (like apples, etc), so keep the skin, wash very clean to remove dirt before cooking though. Thanks for your comment !
@@KikuzenCuisine I have a question, I have heard of only using the outside part of the burdock and discarding the middle because it is very tough. My knife gets stuck. Is my burdock just old? Because when I made it is was very very chewy and had to spit some out.

Come to think of it .... you are correct. It's vegetarian, not vegan !
But, you can use "vegan" mayonnaise, though.... you know.
