Love your channel! Spent 3.5 years working in a classy Japanese restaurant in CA in the 80’s. We ate Japanese potato and carrot curry everyday I believe for our employee meal-I never got tired of it! I also learned to love sashimi and sushi there as well as sake! I remember the Chawanmushi-steamed savory egg custard in small ceramic dishes with lid. Since I’m vegan now I’ll look for a vegan recipe. I remember eating the sunomono-cucumber and seaweed salad as a side. Ty for your recipes/content! ❤️

Some people kinda specialize to recipes from a certain region.
I'm way to picky to determine on a single one.
I can say that there is a lot of stuff from japan under my favorites in comparison to some other countries.
But also a lot of german, french, czech, russian, turkish, iranian, indian, korean and african food is up on that list.

Thanks for sharing, love Japanese foods. light and gentle taste also less oily. The cultures can be quite different sometimes. Western people are more prefer eating without making a sound, eating food quietly like a bird, only the sound of the knife and fork scraping the plate can be heard, but eastern asian (China, Korea and Japan) prefer to make a loud chewing sound, which means the food is yummy.

I have chronic digestive issues which means that i sometimes cant eat heavy, greasy American type food (fried, cheesy) and even raw healthy salads are not easily digested. I have found that simple, small Japanese (and a lot of other Asian cuisine) is perfect for people like me. All vegies are prepared to take the "bite" out. Light cooking to break them down without being mushy. And rice is the easiest carb to digest. Sometimes i mix up the seasonings to get something more Italian or Mexican, but the Japanese way of preparing food and pairing the meal with a broth, warm soup is great for digestive health! Plus your vids are so relaxing!

Really enjoyed watching you prep these simple sides with their ubiquitous ‘Japanese flavors’. Additionally, I enjoyed watching you enjoy them yourself… all those ‘mm ‘mm’s was the sign that you like eating as well as cooking! Very important in a chef. I will follow you in the future. We eat a lot of “Hawaiian Japanese” food but, I prefer your “Japanese Japanese” preparations. Gochiso sama deshita!
