The thing that may be confusing some commenters, is that the recipe doesn’t say how long it takes in the final step at 375°. It takes about 30 minutes. Also, the author is assuming a convection oven per his response to one of the comments. Therefore, you should up the temperatures about 30° for both stages of the cooking if you have a regular oven. I cooked it and it came out perfectly.

it says 30 minutes for first stage, how many minutes for when you turn the temperature up? so frustrating

I see, sometimes I do open the oven door once before filming so it doesn't fog the lens. I promise you the chicken is very hot, you can see it when I break it a part.
It worked…it worked! I followed the “poaching instructions”……and then put them on the grill outside, all the while following as close as possible the cooking temps suggested. They were wonderful, and I didn’t make a mess in mama’s oven! Thanks, Joel.

If I season and air dry the chicken in the fridge for 12 hrs, can I get away with skipping the boiling step? I spiced these ones ahead of time before seeing this video, but I want to try the 2 stage Baking, as I assume 30 mins at 200f will render some of the fat.
Next batch I'll try the par boiling first before air dry and spicing!
Did you ever figure out what the poaching was for in this recipe? Did you notice that it provided any improvements to the final outcome? I've always been skeptical of boiling meats
Could you explain how poaching helps the cooking process as opposed to just cooking them from raw in the oven?

Wow I've never heard of this strategy. Poach in water, dry, cook slow at 200, then finish to crisp at 375? That's a whole new thang!

I have always dry-brined my chicken before cooking. Would I still need to do that, or is the “poaching” technique enough?
Brining will always help if you have time, this technique still works well if you have less time.

Crank it to 375F 190C until crispy.

It's not a stock, but while it's boiling, yes, why not blanch some veges. 😊

I'm baking this now. The only thing id want to know for next time is as I went to put the chicken in, the drumsticks mass definitely stopped the boil. It took a long time to re boil. I boiled for 2 minutes. Is that going to try it out?
No it makes no difference, once it boils again, then leave to poach 2 minutes.

Hey Joel, Can you please tell the oven setting like normal convection, fan mode, or bottom burner only. I don't get the desired crispness, I think it's may be I am using wrong mode in the oven
Perhaps measure your oven temp if you have a heat proof thermometer. Convection or fan oven is standard, add 20-30% longer if non fan forced.
@@recipe30 Thanks so much Joel, I will try convection with fan now, earlier using traditional convection. It's very pleasant to try your recipes and too good video play. Going forward if you can also show the oven mode for your recipes along with the temperature you are already showing, that would really help. As not many people from different parts of the world watching your videos may be very good with using these ovens.
