Good call on the sourdough. We’re blessed to have the bakery here in town that makes Cracker Barrel’s sourdough and I can’t remember the last time I used anything else if I was going to the trouble of smoking some bologna. Not really any trouble, though, especially if you just rotate the chub and score on the diagonal. Doesn’t have to be pretty and the extra surface area is more for better smoke adsorption than anything. I use pepper jack and a few good spicy pickles like Wickles. Might have to try the lettuce and tomato.
There is a lot of Bologna Chubs being smoked I like shotgun reds on the internet. It adds some great flavor to Bologna. I makeva crunch wrap Bologna sandwich of griddled or cook Bologna in a cast-iron pan then make the wrap with your favorite cheese or American cheese mustard and pickle onions then seal corn torilla inside like a crunch wrap. And toasted the whole thing until it is all toasted and the cheese has had a chance to melt. Makes me hungry thinking about it but I am out of Bologna. I like the thicker cut Bologna around 3/8 inched it cooked better in a pan or griddle with a splash of oil and if you haven't had a chance to smoke a chub try a litte smoked paprika or liquid smoke for the smoky flavor. It browns quickly so stay close to the pan I recommend turning often to avoid charing you just what it a medium dark browning or the meat. Like the color of sautéd chicken give the Bologna the best flavor from the maillard reaction in the browningbof thecamino acids and sugar within the Bologna.

We smoke them here in southern Ohio then run it through a meat grinder with diced onion, sweet pickle relish, and shredded cheese. Up here we call it Bologna salad or AKA. sandwich spread!

They do have stovepipe smokers-- not my first choice, but hey, you do what ya gotta do! I'd give my right arm to be able to do this to a *quality* chub of garlic bologna! That stuff is so hard to find-- and if you do, it sucks! I feel so bad for the last couple generations [food-wise] sometimes bc seriously, they really don't do things like they used to!😢 That being said, hon, it's cooks like you that give me hope! Now if you knew how to make Indian/Squaw bread (I know, not PC, but it's the only name I know it by-- and I don't know why it's considered an insult! I'd take it as a compliment!), and you put smoked bologna on it... Just please, don't ever stop doing what you do! Now, if you'll excuse me, I have to go wipe my chin and lie down! Is your Crack slaw the same as what they call "red" slaw? I was in north Carolina last year and had red slaw for the first time and it was amazing. Camel city bbq factory was one of the places I had it.
You wouldn't have to twist my arm to eat this sandwich. Grilled/fried bologna is KING. Well is it better than a steak...🤯...not really, but it's a close 2nd.
My pellet grill is down at my studio and my offset is up in the garage. I was shooting two other videos while that bologna was going and really didn’t have the time to stop and feed a lot here and there.
Its one thing to eat this crap when you're being fed it as a kid or if you're poor, but why would an adult, knowing what bologna is made of, ever put this slurry of unspeakable animal scraps near their mouth?
