HEALTHY BLACK FOREST CAKE | DAY 1 | Vegan, gluten-free, soy-free, refined sugar-free

  • My dear friends, posting the first day of making this amazing #blackforestcake in plant-based version (#eggless and #nodairy).
    The second day will be posted in a week.

    Black Cherry Cream
    140 gr raw cashew, soaked 4-8 hours
    130 gr almond butter
    120 ml maple syrup
    100 gr coconut butter
    80 ml water
    80 ml coconut oil extra virgin
    80 gr sweet cherries (defrosted)
    60 gr fresh coconut meat (or same amount of coconut butter)
    1 tbsp vanilla extract
    1/2 tsp salt
    ----not mentioned in the video but very recommended:
    25 gr cacao butter (melted) - it will give an additional stability for your cake especially in warm climate and in summer time
    Chocolate Cream For Frosting
    100 gr raw cashew, soaked 4-8 hours
    90 ml plant-based milk
    50 gr coconut butter
    50 gr fresh coconut meat (or same amount of coconut butter)
    50 ml maple syrup
    40 ml coconut oil extra virgin
    25 gr cacao powder
    20 gr cacao butter
    1 tsp vanilla extract
    1/4 tsp salt
    Hidden Cherry Jelly Filling
    250 ml tart cherry juice (unsweetened)
    30 ml / 2 tbsp maple syrup
    1 tsp agar powder (in the video I put 1 tsp but I say 1 tbsp. Correct amount is 1 teaspoon).
    30 gr whole cherries

    I'm not really much a fan of the flavour of beetroot, though it is wonderful...I suppose we could use raspberry powder here along with a hint of beet and some mint essence/extract 🙂
    Or maybe I'll stick to just beet and add a bit of apple while crushing the beet to add more sweetness and mask the flavour 🙂
    I'd like to make raspberry or blueberry filling instead of cherry though...I'm not a fan of the cherry chocolate combination...but I would like raspberry filling & raspberry mint frosting with chocolate cake :-)

    Thank you for the cake recipe very much. You are my inspiration ❤
    But I faced some problems. Agar agar jelly stars melting after the cake was defrosted. ❄️What was wrong I wonder. Is it ok to freeze agar agar or I didn’t put enough agar powder in the juice?😕

    Hello, I loved your videos. I have been searching for a good, healthy frosting or butter cream receipe without using cashews and couldnt find any. Can i use coconut cream, raw cacao butter and coconut sugar combination to make butter cream frosting ?

      Yes, you can but the proportions should be tested. Take a look on my Truffle Cake. It has a filling and frosting without cashews.

    This looks delicious 😍
    I just have an observation.
    For the jelly section, your written recipe doesn't mention the maple syrup.
    And I noticed that you have written 1 tsp agar, but in the video you mention 1 tbsp. Same as for the juice you have listed 300 ml, but you mention a different number in the video.
    Which ones are the correct amounts?

      Regarding agar powder. I am adding 1 teaspoon in the video (but yea, I said 1 tablespoon). So, the correct amount is 1 teaspoon.

    Is it possible to buy the young coconut flesh in a can, or do I need to buy a coconut and the special tools to open it?

      In cans, you can buy coconut milk and cream. Fresh coconut meat you can buy in packs in the frozen section of some stores, or you can buy a whole coconut and open it. Yes, you will need a special equipment to open coconut. I’ll share my tips soon. Meanwhile, just google how to open young coconut ☺️

    Strange question . What is the temperature in your kitchen ? By this I mean do you have to worry about thing melting while working with them . And I am making white chocolate truffles today

      I live in Miami, Florida. The temp is about 75F/24C. If you're going to mke drizzles one hour, so the temperature in your room is matter :) But for 20-30 minutes work, it is important ti follow temperature protocol for cake and chocolate ganache mentioned in the video.
      Thank you for making my white chocolate truffles. Cover them with freeze dried raspberries and cacao powder. Itw ill be two extremely different flavors :)
