I make a similar cream for my cakes, one thing I do different is I put the cream in the refrigerator to set and get cold, usually about 6+ hours. Then I'll take the cream and whisk it with a hand or stand mixer and you will get the most airy whipped cream that is stable at room temperature and does not collapse under the weight of the cake. It's a perfect frosting.

Hi Olga! Thanks so much for this recipe! Quick Question. I couldn't find chickpea flour, what can I use as a substitute? I bought the Red Mill brand Oatmeal Flour, Cassava Flour, and Coconut Flour but they didn't have the Tapioca other, so I couldn't get that one. Which one of the three would you recommend as a substitute for the chickpea flour?
Hi Olga. Can I use honey in place of maple syrup for cashew cream and avoid cocoa butter? Will I get a cream frosting or I will end up in something else?
Hi Olga , thx for sharing this recipe. Is there anything I can use to substitute in the frosting for coconut oil ? Eg : cocoa butter + agar agar ?
Please, take a look to frosting in Carrot Cake. As I remember, it doesn't have coconut oil.
