Making Sugar Beans curry - Another weekly staple in the Luckan household!

- Sugar beans curry with soft cooking potatoes is highly regarded as a firm favourite not only in the Luckan house but also much of Durban. This simple vegetarian recipe was cooked almost every week, once a week, either on a Monday or Tuesday and is one of the first recipes my kids learned to cook when they moved out of the house.
Ingredients:
1 cup sugar beans, boiled till soft in 2lt water. Reserve water used to boil beans for gravy
For braising
1/2 cup oil
1 medium onion sliced
2 small tomatoes grated
2 potatoes cup up
1 cinnamon stick
curry leaves
1/2 tsp dried thyme
1 tsp crushed ginger and garlic
2 tbs mixed masala
1 tsp hurdee (tumeric)
1 tbs rough salt
Dhania to garnish
We made sugar beans bunnies with the sugar beans curry. Can also be served with roti or rice with salads and pickles.

Thanks for sharing this. Just a suggestion. Please add a pinch of hing when braising to reduce the gass.
Yes, a lot of people do add hing to help with digestion and gas but we prefer not to.

Yep rice with beans curry is also a firm favourite. Sometimes, if there is curry and rice left over we like to heat it up on the stove together the next day and it tastes so good!
Namaste Nani 🙏 I love watching your videos! They have truly inspired me to enjoy my time in the kitchen! In Johannesburg I find that beans and dhalls take forever to boil so I would recommend that you use my favourite toy... pressure cooker!! I usually boil a cup of sugar beans in 30 minutes! Then I allow it to release its pressure naturally and braise my curry while it's cooling! It's an awesome time saver and incredibly safe!

You are so right , Aunty , using the water that boiled the beans enhances the taste so much more. My late Mum should also keep some of the water that boiled the trotters to use in the curry. Thanks for sharing this recipe.

Hello Aunty. Enjoy watching you cook all those delicious meals. When I was studying at UDW hostel food was not good and I used to go to into town with friends on Saturday and enjoyed bunny chow. Please make a video on making a mixed vegetable curry bunny chow. Thank you.
Thanks for sharing. What was your restaurant of choice? There were quite a few but I think the one that did the best vegetarian bunny chow place for us was Patels! Victory lounge was also really good!

Sorry cannot remember the names of cinemas on Gray Street and Victoria Street. Being a vegetarian and also jossie boy, it was our best option at that time. Looking forward to your vegetarian curry recipe for the bunny chow. Mouth is watering already.

After cooking this, can you add samp to it or is there a different way to make samp and beans, but plain for fasting days, not with any meat
Mrs Devi I made sugar beans today following your recipe, it was tasty, only thing my potatoes were not soft, I had no up to date potatoes, but also wanted to ask you something about curry leaves , mines get black, after like 2 weeks or less, what am I doing wrong, even my dhania gets rotten,
You right about the water it's makes excellent gravy, I am going to try it again,
We sometimes struggle with the potatoes here ourselves. What you can try is frying them like we sometimes do for biryani or letting them cook for longer and add additional water until they are more cooked.
Curry leaves can be dried out in the sun and that way they stay for longer. Once dried you can add them to your masala or keep them separate and use as required.
Dhania can be chopped up and frozen and used from frozen to make them stay longer…
How long must I soak the sugar beans for before boiling them auntie
Hi Gaithree, I see you don't use cloves and Cardo om to braise. Is that intentional?
