Making the most delicious Vadde/Vedah

  • The jury is out on the spelling of the name of these tasty fried snacks. But everyone agrees that they are the best fried snacks to have before or after a meal, with tea!
    Ingredients
    2 cups pea dhal (soaked overnight)
    2 dry chillies (soaked for an hour)
    5 cloves of garlic
    2 tsp whole jeera
    2 tsp dhania powder
    2 tsp jeera powder
    2 level tsp salt
    2 level tsp baking powder
    1/2 tsp sugar
    1 medium onion finely cut
    2 green chillies (add more or remove for according to taste)
    8 stems of spring onion
    1 handful dhania leaves
    1 large mug of oil for frying

      We have not used the ready made mix ourselves but I am sure it should work out fine if someone has tried and tested the product before selling it.

    Thank you for sharing. I tried your recipe twice and both times it turned out devine. Everyone at home loved it. Please show us how to grind dhal ahead of time and freeze cos that was the time consuming aspect of making vedda. If I ground dhal ahead, it will save me time in the future wen my family wants a snack. Would i also be able to use frozen gram ground dhal for dhal roti using the same freezing method? But label them as to not confuse the dhal wen frozen.

      Hi I’ll show the method of freezing and re-making Vadde.
      Vadde is made with pea dhal. Dhal roti is made with gram dhal which is boiled and then ground. It’s not advisable to use Vadde dhal for dhal roti…

      It's just a dipping sauce Pranesh mixed up with some sweet chillie, some tomato sauce and a little bit of Mrs Balls. You can also throw in some nandos sauce for some heat.

      Yes we can, but do not add the onions. If you find after defrosting that the mixture is wet add in some channa flour to dry the "wetness"

    I love these Vadde's. A quick story on how I helped an Aunty in Debi Place Pmb in the mid-nineties. I can't remember the exact price she used to sell 3 vadde's for but let's say R2. She kept the vadde's she fried in a basket but I wanted the hot ones she had just fried. She refused, giving me a long lecture on who the hell is going to buy the " colder" vadde's, if she only sold HOT vadde's. I hit upon a brilliant idea to get HOT vadde's. I offered to buy 3 for R3.
    She thought about it for a second and agreed. So after about 4 Friday's of buying Vadde's at an elevated price, on the fifth Friday I was amused to see a sign next to her basket. It read " Cold Vadde's 3 for R2 " and next line " Hot Vadde's 3 for R3 ". 😁

      You can try this recipe we made for puri. We add semolina to make the puri less oily but it is also important to have the oil hot enough to fry the puri out and make it less oily.

    We want it with a little strong taste, and we got bird eye red chillies , also we want to know is sugar used to break down acid,

      The sugar is more to make the veddah become more crispy and that golden brown colour.

    Aunty what to do if vadde mixture is not binding properly

      This could be because the dhal was not ground fine enough. If this was the case adding chana/gram flour would help.
      Also if the dhal is fine but the onions were added to early, the onions could release excess liquid and also cause the mixture to be runny. In this case also adding chana flour will help but work immediately with the mixture

    Hi Mrs Devi I made the mixture, I never drained my dhall and my mixture was so wet and sticky so my sister used gram flour, do you think the dhall was too wet,

      Yes you have drain the dhal quite thoroughly. The gram flour if the mixture is too wet is a good hack. Adding the onions too far ahead of frying can also result in the mixture being too wet - onions must be added just before you are ready to fry...

      Could be that the dhal was not crushed enough and therefore is not binding. Add in a few table spoons of chana flour until it binds tighter.

      Thanks for the question. I used yellow split peas. I soaked overnight and then drained thoroughly before grinding.
