Making the most melt in your mouth home-made paneer - Plus delicious pea and paneer chutney to enjoy

  • We decided to try our hand at making paneer at home. And what we thought would be an easy task turned out to be a little bit harder than we thought. Eventually we got it worked out after locking in a few variables - we discovered fresh milk works better, lemon juice makes for a softer paneer than vinegar does, getting the lemon juice out is important and draining and ensuring all the water has been removed is also important.
    Definitely one that is more time consuming but in the end rewarding!
    Ingredients
    For making paneer
    2lt full cream fresh milk (to make ~300g paneer)
    Juice from 2 lemons ~ 1/4 cup juice
    Dilute lemon juice with 1/4 cup water
    A generous pinch of salt
    For chutney
    300g home made paneer
    5 med round tomatoes, grated
    1 small onion, grated
    handful of curry leaves
    5 cloves of garlic
    2 green chillies
    1/2 cup oil
    2 tbs tomato puree
    1 cup frozen peas
    1 tbs mixed masala
    1/2 tsp hurdee (tumeric) powder
    1/2 tsp mustard seeds
    1 tsp rough salt
    Dhania and spring onion to garnish
    Serve with hot soft rotis:

    And the chutney uses mixed masala

    May I suggest AFTER drying the Paneer out, use a plastic sheet, roll the cheese so its rounded,shaped it, seal the sides and chill. Once its shaped, slice when using into flat cheese rounds. Easy peasy.

    Thank you for sharing. I as well make my own paneer .. first try was 10 yrs ago.. first flop as I didn’t give it the 30 min waiting period.. Tried the same week got it right.. Now I make instead of buying although it uses 2,lt milk.. but it’s worth it.. always make extra n freeze it.. I also use it on salads but I pan fry gently with butter for less than 1 min.. kids love it. I even use it in my veg breyani… The uses varies a simple meal to an elegant dish 😜from Anesa

      Most welcome 😊 We keep the paneer for a couple months usually but we love eating it so we don't usually keep it for too long!

    Wow!! I love the recipe.
    Optional extra would be, just before adding the lemon juice the milk, add a bit of finely chopped fresh dharnia and sesame seeds.
    Chopped cashew nuts will also give a bit of crunch.

    I always use to fry my paneer before putting in the chutney , because it used to break if I did not

      We tied the cheese cloth onto the tap that hangs over the sink. Depends if your tap is high enough. Another alternative would be to use a wooden spoon across a large enough pot.

      Hi, we don't normally make Kheer so I don't have a recipe. We do have a sweet rice recipe up on the channel.

      Yes you can, I am not sure of the exact amount on the vinegar, it may be less than the lemon juice - I would suggest 2 tbs to start with, diluted with water to make half a cup. We did find that when we tried the vinegar it makes the paneer a bit harder.

      @@GaithreeDeviLuckan Thank you for your reply. I tried making it with 1/4 cup vinegar and 1/4 cup water. It was slightly crumbly. I kneaded it well and it came together. Made into a block and cut into squares.

      We didn't hang it, we leave it to drain in the colander and then put it under the weight to squeeze out the extra liquid

    Hello Aunty, can I use long life full cream milk instead of fresh cream milk? Does it make a difference?

      Yes, definitely. We tried with long life milk and because it is ultra pasteurized we found that the long life milk tends to be more difficult to curdle so would highly recommend full fat fresh milk.

      We refrigerate overnight. But the paneer can also be frozen once you've made it.

      Hi Shayma, check the 3min20 mark, the soya mince is added after the onions and garlic and some of the spices are braised.

      The water is more to wash out the lemon. We’ve found if we didn’t wash the lemon out the paneer does melt when cooking and also you get the strong lemon taste in the paneer itself

    How can I make paneer from Maas?

      Not sure if it can be done. To get the recipe to work we attempted this one several times until we got the proportions correct. Maybe a start would be to substitute some of the milk with the maas and see if it curdles. Start with smaller portions of maas and milk at first.
