Making hearty, comforting Samp, beans (Umngqusho) and mutton - A long time family favourite!

  • Samp is a maize derived South African staple and combined with beans makes for a nutritious meal. Adding the fatty cuts of lamb meat elevates the meal to a whole new level of deliciousness!
    Ingredients:
    800g - 1kg lamb meat
    Marinated in
    1 tbs steak and chops spice
    1 tbs BBQ spice
    1 tbs crushed ginger and garlic
    1/2 cup sour milk
    Sprigs of thyme
    Few curry leaves
    For Braising meat
    1/4 cup oil
    1/2 onion, finely sliced
    1 cinnamon stick
    Elaichi (Black)
    2 tbs mixed masala
    2-3 bay leaves
    1 tsp rough salt
    For Samp and Beans
    1 1/2 cup Samp, soaked overnight
    1 cup sugar beans, soaked overnight
    1 tbs rough salt
    1/2 tsp hurdee
    1 cinnamon stick
    2-3 bay leaves
    1 onion, finely sliced and fried as garnish
    Dhania and spring onions for garnish
    Serve on its own or with dhania chutney on cold days when comfort food tastes the best!

    I love how slow you speak and how slowly you take us through each process Aunty. It gives us time to take in everything . I just started nurturing my love for cooking , I love making meat curries so this is great for me. Grateful for this channel

    I'm making samp and beans today so I just wanted to see how others make theirs. I came across this video and immediately started missing my granny so much, so calm and therapeutic. I don't usually make it a curry style because my gran always made it more of a brown stew style but i love mutton and mutton carry so I'm definitely going to try it this way as well!

      No not really, the maize in the samp acts as the carbohydrate in the meal. You can eat it like a soup or stew.

      We have always boiled the same before cooking. I think using samp without boiling first will leave it very hard in the final product.
