Sugar Beans & Potato Curry |

  • Ingredients:
    1kg of Sugar Beans
    Boiling Water
    3 tbs of Oil
    2 sliced Onions
    2 Green Chillies
    Fresh Curry Leaves
    Bay Leaves
    Cinnamon
    2 Starraise
    1 Ginger & Garlic
    1 tsp of Cumin/Jeera
    1 tsp of Roasted Coriander/Dhania
    1 Heaped tsp of Tumeric
    3 tsp of Masala
    1 in a half tsp of Chilli Powder
    4 small liquidised Tomatoes
    3 for 4 Curry leaves
    1 Green Chilli
    Half a tsp of Sugar
    4 diced Potatoes
    Salt
    500ml / 2 cups of Boiling Water
    Fresh Coriander/Dhania
    Can be served with rice, roti and a traditional bunny chaw. (Unsliced Bread)

    Just caught this now, guess I missed it in hospital, this is authenticity to the maximum, you have not lived until you have tried this Picasso of indian cuisine. A quiet dish, nothing outstanding visually, one would rather say subdued. On a visual scale it lingers around the 4-5 mark however, that is for the novice, the finger tip eater. Once tasted, this masterpiece propels forward like Hamilton on adrenalin. Its at this point that reality strikes and all u see is sweaty brows and the only word you hear is....wow. Those that dont understand our cooking methods have a convoluted one dimension mindset regarding our cuisine, the names given to our dishes, the pronunciation and their attempt in creating our classics fall short of a hilarious comedy show..I just shake my head when I see a samoosa go from a triangle to an oval creation of something that belongs at the unforgiving end of fishing line. I wont even indulge myself in describing their attempt at curry..it makes me want to gorge my eyes out and shove my head in a meat grinder..o lord have mercy on the senseless....Sol, this is a cracker dish, you have taken us all back yet again, the bunny on the bonnet rings true, thank you for holding our traditions true to your heart, give my regards to Doc, keep the kids safe and remain blessed.

      Dear Randy, I hope you are well. I too love innovative dishes & developing new recipes but yes these are the untouchable timeless classics ! They are legendary dishes that pack a punch of flavour. Sugar beans & potato curry has such a humble homely feeling, it’s truly spectacular in all its simpleness.       Your critique is humbling to say the least, however, the most lettered of us cannot serve justice in all in virtue...to the insanely mind blowing ala carte presented by Solina. For me personally, each dish is a remnant of happier more forgiving times, its a journey back in time and we all know that time isnt measured in seconds, but by the breaths we take. Solinas triumvirate of culinary passion, humility and sheer craftsmanship is served in two fold, in her seamless presentation and in the true determinate, taste. To the obsequious..we are party to them on bland cooking channels..never will they match such timeless classics presented by Perimas, I am a devout follower I would know. No..I am not a writer thank you, its humbling however, just as Solina crafts her masterpieces from the heart, so to do I pen from the same source. I narrate on an informed interpretation of authentic cooking, Sol is from the masterclass of legendary yet never recognised, Indian 5 star Michelin chefs, our mothers, grandmums etc..Solinas dishes dont need a curtain raiser, or a spotlight, they are the par excellance of a salivating Emmy or Oscar..for Perimas to leave one so immersed, they had to mesmerize the mind like soulful music does, watching her cook figuratively orbits you into that kitchen, one just needs to shut their eyes and appreciate the dance of different sounds and smells in that kitchen..mastery at its best. I used to watch my mum turn out these beautiful dishes and Perimas is the first, and I say this with gusto, to bring that home cooked feeling back. Hence in my opinion, The rise of cooking channels have seen culinary conspiracy theories dominate, with thousands led, Pied Piper-like, down a rabbit hole of beliefs that often make little sense, Perimas however...makes complete sense. This is not cooking that consciously robs other seasoned and decorated chefs of their autonomy by “helping” or “fixing” them no, is does however, bring home a realization that their culinary survival is largely dependant on acknowledging and weaning the mastery of what chefs like Solina present, timeless altruistic cooking methods...Perimas is well celebrated, I suggest you take the journey and indulge in the various presentations on this channel...they are, carte blanche unmatched.

    Sounds and looks goods, yummy. Never encountered sugar in sugar bean curry. Not sure how well it

      Hi Rusty, half a teaspoon of sugar is added to balance the flavours curry & the acidity in the tomatoes. Any of my recipes that have a lot of tomatoes & /or dependent on the type of tomatoes used, I add a sprinkle of sugar. Happy cooking 😘

    👍🏽 sadly I've had to give up bread for health reasons.😭 No more bunny chow for the future.😭 It looks so delicious. Our chef was making toasted sandwiches at the office and the smell was seriously testing my resistance.😄

      I got mine from my garden but you can use dried too. Try to get a small plant , mine looked like a Christmas tree 5 years later 🥰

      Yes sometimes we all need that convenience so you definitely can ... don’t add all the preserved juices... if you want, you can do a quick rinse in the can & add OR add only half of the juices if you don’t mind the taste & it’s not too overwhelming for you 💫

      P.S Cook your potatoes first & when it’s almost ready then add your cooked beans with a little bit of boiling water. 💜🌸

      Yes you can or like Joshua mentioned you can buy from the dried sugar beans as well 💕

      I also bought a lot of cans of sugar beans during covid. So yes you can definitely use it. Braise your potatoes first , once it’s ready, then add your canned beans . Let it simmer for 10 mins, check for salt & then add your dhania. Love ❤️ Solina

    What is the difference between masala and garam masala? Can I substitute garam masala for masala?
    Also, if I can't find curry leaves, can it be substituted with curry powder? In what ratio?

      Garam masala is powdered whole spice..eg cinnamon stick, star anise, bayleaf, clove.
      Masala is more chillie based...red dried chillies, cayenne pepper, & can include garam masala & other powdered spices.
      As for curryleaf substitute, I'm afraid to say, there isn't any. It has it's own unique flavour & I doubt anyone's found some herb to replicate it.
      As a quick 'masala mix', mix a tsp of cayenne pepper, a pinch of black pepper powder & 1 tsp paprika( un-smoked ). If you have garam masala, add a tsp of that as well...mix all together & you should have the makings of a mild-ish curry powder. Happy cooking!

      Hi Cynthia, I used Nagiah’s everyday Masala. Where are you located so I can advise where the nearest branch is? Alternatively you can go to the closest spice store & purchase a mixed masala. Regards Solina

      You can actually break it up & use less if you want. It has so many other benefits apart from adding a delicious flavour. Alternatively, fry a little somph seeds in the oil instead or add a touch of somph powder - it’s not the same as star anise but maybe it will help your curries flavoring. Happy cooking 🌶❤️😘

    So heres the issue with this recipe, which I tried by the way, fresh out of ideas and me embarking on something simple for the kids...this recipe has one major flaw..the kids cleaned out the entire thing, they left sweet nothing for mummy. How on earth!! Their excuse was, haai daddy...too tasty..now for someone whose getting their mind in order, trying to kill 2 birds with one stone, how do I even begin to dissect that and even embark on another perilous culinary journey that I thought would be food on the go...wiped out, faster than Elinor Gone in 60 seconds !!! Well...back to the kitchen for me on another journey minus the kids whom are now all in a python like state of blissful rigor mortis...
