In the Southern US we have 2 dishes that come from slavery which we eat today. The first is gumbo which is an okra and seafood soup we also add other meats too such as chicken. It’s one of my favorites. The other is just no name but maybe some from Louisiana might call it Maque Choux which is corn, okra, tomatoes and bell peppers, onions and sometimes meat. Sometimes we make the same thing with no corn and eat with cornbread and rice. I wonder about the African influences. My great grandmother generation and those before her also would eat that dish with their hand. Nobody does that anymore. It was thought be to done due to slavery and poverty and lack of education but I actually think that this it was another cultural clue which was lost. Maybe they ate that way because they wanted to from tradition. My great grandma and friends certainly had access to forks when I saw them doing it.

Ok to soup and okra stew are two different things and it is not more or less water that changes that okra stew has a red stew base, whereas okra soup is a white soup base ( no tomatoes) .
