How to make mango chutney | Hari Ghotra

  • Mango chutney forms the basis of any Indian meal for many people in the UK. It has become a long term tradition that a meal at a curry house always starts with popadoms and chutney's to get your tastebuds tingling with excitement about what is about to greet them.
    Although it's not really a condiment that Indians would have with a meal as it would be deemed too sweet and we tend to have a more savoury mango achaar rather then a chutney with a meal, it still has it's merits. It's thick and syrupy consistency is a wonderful Anglo Indian hybrid that has earned its place in food history.
    So here is my version, yes it's heavier on the chilli because for me the chilli, sweet and tangy balance is really important. If you prefer a sweeter version then you can increase the sugar content up to 250g and reduce the chillies too.

    Ingredients:
    3 tbsp vegetable oil
    1 tsp cumin seeds
    1 tsp kalonji seeds
    8 cardamom pods, (you can use the seeds only and discard the husks)
    3 cloves
    5 garlic cloves, crushed
    2.5cm piece of ginger peeled & grated
    5-6 green mangoes ripe (approx. 250-300g each)
    1 tsp red chilli flakes
    1 tsp Kashmiri chilli powder
    ½ tsp turmeric powder
    ½ tsp ginger powder
    250ml cider vinegar
    150-250g jaggery/brown sugar (I used 150g)
    2 tsp salt flakes
    2 red chilli, sliced (increase for more kick)

    The best Indian chutney I ever made was lemons mixed with Fenugreek, salt, chilli and oil, fermented in my conservatory over months. The taste was absolutely amazing.

      Sounds more like atchar that you made. The favourite atchar is mango atchar, but lemon atchar is also great. Best English equivalent for atchar is pickles, though not totally correct.

    Wow! I couldn't afford the mangos but have an abundance of warwickshire (yellow) plums in my garden so substitute them. What a winner, you would never know the difference. Spices are everything. Thank you for a great recipe. ❤

    I find that the easiest way to dice mango is to cut and slice the way Hari does and then scoop the pieces out with a spoon. This recipe looks delicious.

    I'd like to do this recipe but here in Brazil we have lots of mango friit, but not all the seeds you mixed on it. I like to have it with roasted chicken or pork chops. Nice recipe!

    0:45 I was worried slightly until you cleared it up that mango pickle is just an Anglo-Indian-Bangladeshi restaurant thing. I also can't help but think that the store-bought Geeta's mango chutney is also about as good as it gets anyway.
    Perhaps you could expand on the whole Indian pickle cuisine where souring is a preservative in warmer climes but little known in northern climes. Okay, I'm angling for a version of chicken pickle, something that I have tried and adore.

      Im from punjab and mango chutney is an everyday go to. Kids love it with parantha. To say that its an anglo Indian bangladeshi restaurant thing is not true. Every state in india have their versions of chutney’s and pickle’s. We mostly use raw mangoes

    Hari that's not the way to cut up a fresh mango. Please please you just use a peeler. Don't try and be a clever duck and try and bring ur chappy western ideas into this. Mango us tropical fruit.
