      People who complain about crispy food baffle me. I love crispy food. For me, I can't stand food with the consistency of jelly or gummy bears.

    I made Victoria's 2.0 flour with almond flour and bamboo fiber. I made blueberry muffins that were divine. Remember, the fiber may be new to your gut so go easy until you know how it affects you. I had no issues, but I have been keto almost 12 years.

      Okay... victoria 2.0 flour? Is that on youtube or somewhere? Do you use it for all your baking? Sorry, trying to convince my husband to try more low carb and he HATES the almond flour and Coconut flour. If I can find something that is more like regular flour maybe I can convert him. My type 1 son hates all the almond\coconut flour recipes as well... He's a big breakfast eater and loves waffles, pancakes, french toast and breakfast tacos.

      There are other great substitutes for that type of flower now they're making those things out of egg whites which has no flour Maria emerick has a few choices and Chris cooks in Nashville has a couple most of the carnivore community makes their bread products without nut or coconut flours due to allergies 😊 and I don't sugar code it uses loop and flour

      ​@@mimikels9443 it's on Victoria's Keto Kitchen here on RUclips. She has several different flours she has come up with, but 2.0 is her latest. Sometimes bamboo fiber is hard to get because they were running out so quickly. Hope this helps.

    Since bamboo is technically a grass it is extremely efficient and sustainable to grow. Almonds actually require a lot of resources to grow and harvest.

    I used Victoria's New flour substitute and had the most amazing biscuits and pork sausage gravy. I even used her flour to thicken the gravy. It was so good. To good, I made a pig of myself that day. It was the first time to have biscuits and gravy in over two years. It was so good I will only have it for special treats.

      Victoria's Cream of Chicken recipe uses her NSKF 2.0 and it's outstanding! I made chicken and dumplings with it the other day. 👍

    Bamboo contains silica, and bamboo/silica is an ingredient often used in hair loss prevention supplements.
    It's also said to be very good for skin and nails...may help to prevent/reverse wrinkles.
    Allagedly. Just what I've been told.

    Bamboo Fiber (Flour) has completely revolutionized my keto cooking/baking. Best thing since "sliced bread" (LOL forgive the pun! ) Glad to see you doing a video on this. GO to Wes's high falutin' low carb and make the biscuits that Wes made - they taste just like REAL biscuits! I have made sugar free cookies, bread loaves, Dinner rolls, hamburger rolls, Sausage gravy, Blueberry yogurt loaves, zucchini- chocolate bread. I feel Using it to just make chauffles is a great disservice to bamboo fiber when you can do SO much more with it, and it works much better than almond flour. Initially, I bulked at purchasing yet again - one more thing for my keto way of life - BUT I'm glad I did, and now I try to order one bag a month because As I said, for the first time since going keto/ketovore years ago - I have bread and rolls that taste like the real thing and that's simply amazing to me.

      Is it a 1:1 sub for regular flour? How much do you use? Or are there recipes online specifically for bamboo flour?

      ​@@linley01Yes, I believe you can interchange 1:1 but not completely sure. I use it as a supplement to make my keto baked goods more airy. Specifically, I add a couple scoops of it to Maria Emmerich's egg white protein bread recipe and it's phenomenal. Game changer for me.

      @@linley01 You are supposed to be able to use it 1:1 - but in all honesty - some recipes work better with that substitution than others. It's very hard to find good recipes using the bamboo fiber flour on the internet (sadly) - Victoria's keto kitchen 2.0 "flour" blend works best. You can find those videos on youtube. She also has a web site with written recipes.

    I thank God for you girls. It is sooo great to be able to eat a cheeseburger that isn't stuck between a bunch of lettuce. I love chaffles it's so wonderful to be able to have bread again without having to make a loaf just for one sandwich. You twins make my life so much better, thank you. I'm diabetic so this is the way I need to eat to keep as healthy as I can.

    For lunch today I made your latest keto crunchy chaffles as a base for a personal Pizza. I took one of the Chaffles & I put Rao’s. Pizza sauce on it then topped it with Canadian bacon, bacon and Italian sausage and then I topped it with cheese. Put it in my air fryer for a few minutes to melt the toppings. OMG that is the best pizza I’ve ever had on keto!! I will be using your chaffle recipe to make my individual pizzas for now on!!!!!

      Pizza crust has always been my main use of chaffles. Lately, I have been using Keto Thins made by Arnold's. They are really good.

    Bamboo flour has around 27g of carbs per 100g. It is bamboo fibre that has 0g carbs. The Victoria’s Keto Kitchen flour is a blend of almond flour, bamboo fibre, egg white powder and xanthan gum.

    I just made a batch of ATK dream biscuits with Victoria's recipe for her Standard Perfected Keto Flour(SPKF). Added garlic powder and a little parsley. As good as Olive Garden's, possibly better!

    I use the bamboo fiber in a flour mix from Cook with Mel. She uses either almond flour or chicken flour with hers. If you use the chicken flour ir is absolutely a 0 carb flour that can be used for biscuits, cakes, cookies, etc.

      I don't think they are intentionally leaving anyone out. There are a lot of channels using bamboo fiber. I happen to like Cook with Mel's flour the best and I use it in place of regular flour in recipes. I usually use 1/2 chicken and 1/2 almond mix to keep my carbs lower.

      Victoria's Keto Kitchen is easy to find in a search. As I recall the 2.0 is the previous latest (almond) flour (mix) that she still recommends if you don't want to use her latest flour (mix) with the bamboo fibre.

    I agree with others, bamboo flour and bamboo fiber are two different things. Victoria from Victoria’s Keto Kitchen mixes bamboo fiber with other ingredients to create her flours.

      @@ketotwinsright, but what she’s saying is that on Amazon, there are two different bamboo products being sold. One is bamboo fiber, the other is bamboo flour, and they are not the same thing and are not interchangeable. The bamboo fiber is constantly sold out, but bamboo flour is not, so a lot of people think they can just get the flour, but it’s higher in carbs. Hope that makes sense

    Chaffles are very flexible and forgiving. I have used protein powder, Lupin flour, almond flour, Victoria's New Standard keto flour mix, and gluten free King Arthur flour. I haven't tried straight up bamboo fiber though. I have no regrets buying the bamboo fiber for my pantry; I use it a lot.

      @@zoftig65 Look for Vernaz low carb/keto recipes channel - she has a bamboo fiber roll which turned out really good for me. I also use it to make Victoria's Keto Kitchen's flour (Emily mentioned her channel in this video). You can use bamboo fiber or oat fiber, and in place of the flour part you can use pecan or almond (I use lupin but that's not tested by Victoria). Also the Cook with Mel keto channel - she uses the bamboo fiber in her flour mixture, so watch her video on The Amazing Clean Keto flour. Both Victoria's and Mel's are substitutes for all purpose flour. Mel uses chicken but she says you can use lupin - just watch the short video. I'm going to make some of hers this weekend and try it out. I've been only using Victoria's mix. But both have the bamboo, and Vernaz uses JUST the bamboo in those rolls. She has a couple of other videos on bamboo fiber too. Hope you end up loving it too!

    I made chaffles with Bamboo fiber this morning and I baked it in my ice-scone machine. It’s so crispy, I could make taco shell out of this dough. 😊

    I have tried a couple of recipes with the bamboo fiber, and I have had pretty good luck with it. I made a mug cake with Victoria's flour blend that was really good.

      It IS an ingredient in her flour, but interesting these wonderful ladies used the fiber alone. Also in saying that the cheese they use would flavor the fiber in the chaffle. There seems to be no flavor imparted from the fiber. I made the dream biscuits and they were fantastic. That is all I’ve tried to date, just got the bamboo fiber. And bamboo flour is completely different than the fiber. Thank you ladies I just love watching your videos!! ❤

    Same here with the griddle. I went keto back in February of 2023 and was making my batch of 4 chaffles with 2 Dash singles. After almost a year, I FINALLY broke down and bought a 4 chaffle Dash. I don't know why I waited so long. You would think cost a couple hundred dollars. Now I make batches of 12 chaffles at a time, use what I need and freeze the rest.

    Thank you! I didn't care much for lupin flour (dry) & was hesitant to buy this one! Maybe we could use it as breading when egg + flour are the dredge? Like fried shrimp or chicken nuggets? If you season the bamboo flour w s&p & onion powder or parmesan cheese to give it flavor it cld be good. ❤

      Yes you can use Victoria’s 2.0 for anything. I made liver and onions and put my spices in the flower and it tasted just like when I used to make it with normal flower. My husband couldn’t tell the difference it’s a winner.

    I used Victoria’s flour to make my mother’s biscuits. In terms of taste and texture, they were great. The only difference I would note is that the volume of the flour is different versus wheat flour. Consequently, the recipe using the Keto flour did not make nearly as many biscuits. (I used 4 cups-a doubled recipe, which with normal flour would make 12-14 biscuits easy.) I got about 8 biscuits from the Keto flour, and I also needed to cut back on the salt because of the lower volume. They were quite good though, if a little pricey.

    When you tried the chaffles, I could tell right away just by the sound of the crunch that the one with bamboo fiber was more airy and slightly softer. I love using bamboo fiber in my recipes, but I have never used it on its own as it is just a fiber. I mix mine using Victoria's flour mix recipe.

    I have watched Victoria's videos about the flour and I feel like it's changed about 4 times since the original. I can't keep up with all the ingredients changing so much so I'll do without whatever I'm not having.

      They are simply variations based upon the ingredients you prefer to use, like using pecan flour instead of almond flour. You're making it harder than it is.

      I cannot do almond flour but I can do the pecan flour. I also do not want to do the oat flour so I am doing the bamboo flour. I felt like you did but then I read comments where people could not do any of the nut flours or could not easily get the bamboo flour and then I was glad she was so flexible with the ingredients. Next I am trying the flax seed flour.

    Hello all~ I have been trying different flour blends & different brands of low-carb flours for bread baking for awhile now. I recently baked a sourdough boulé using a combination of King Arthur's keto flour & Victoria's 2.0 flour blend. I am so happy with the results. My family kept going back for more! The crust was crispy & the inside was perfect. Victoria's 2.0 blend is wonderful. Biscuits made using CarbQuick are comparable to Victoria's recipe which are very tasty. I have been using King Arthur's Keto flour for my family-size pizzas with great success. Using the new keto baking mixes now available in local supermarkets have given me many more options for baking recently but they can be pricey.

      Following Ketotwin's model, I used Brian Lagerstrom's recipe as he demonstrates in his RUclips video only substituting King Arthur's Wheat keto flour. You may use sugar, honey or inulin to sweeten a bit and help the yeast grow, your choice.
      One VERY IMPORTANT POINT I learned to improve dough's stretch is to ALWAYS use A WET HAND when stretching the dough! Most folks say "using a wet hand" so casually but it's a game changer.
      I have found planning meals ahead helps. So making the dough the day before only increases my anticipation of the delicious pizza planned for the next day.
      Oh...add keto-friendly toppings of your choice, of course.

    Well, look at it this way: have you ever eaten Chinese food? A lot of dishes have bamboo shoots in them and you can buy canned bamboo shoots in the grocery store. So I guess we do eat trees…. But I will draw the line at bugs - no cricket flour for me, thank you.

    Hi , I don’t remember which web site I went to. Just google the subject and it will pop up. From what I read if you have a thyroid problem and take thyroid meds it may not be good .

    Victoria has way too many versions of her flour for me to keep up with so I prefer to use Cook with Mel’s keto flour version. Makes life much simpler lol.

    I use bamboo fiber in my very low-carb bread. I used to use oat fiber, but I like that the bread has a lighter color using the bamboo fiber I’m going to try your chaffels And cottage cheese chips love the work you two do. Thank you.

    Thank YOU! I just recently (2 months) found I am 'sensitive' to Almond Flour. Tell that to the two whole bags in the fridge. I'll make things 'separately' now for my husband. But thank goodness some favorite things from favorite people are helping.

    I make a chaffle for breakfast every day and i donot use xanthan gum at all. I use a belgian waffle maker 2 whole eggs, fine choped mozzarella I buy the block so I dont have any flower in it, almond flower, vanilla, sweetner once is done I cut it in half and put some chees on it some patramy and make a nice breakfast sandwitch that will fill me all day.

    I have the 4 unit Dash waffle maker. I love it. Beside the fact that it makes 4 chaffles at a time, I also love the side channels that help prevent overflows. Great recommendation ladies! ❤️🥰❤️

    Bamboo is a type of grass and if you think about it, a lot of the grains we use come from bearded grasses but it shouldn't taste like much of anything

    There's a couple of channels I saw that used the bamboo fiber mixed with some other items to make a more passable flour substitute. I think High Falutin' made some biscuits with it and gave it a thumbs up. I haven't tried it yet

    I made both of them. I do like the bamboo texture a little more. I put butter & sugar free syrup on them. I felt like I was cheating because they were so good!

    When I first heard about Bamboo flour I was so excited. I started investigating it. I found out it may affect your absorption of certain medications or affect certain medical conditions you may have. So sadly I can’t use it. Always investigate before . Just because it’s a food and natural doesn’t mean it is good for you. Every one has a different situation. Thanks for trying it out.

    there is a channel that starts with Bamboo but I cannot remember the rest of it, however, I did note that they mix 80 g of bamboo with 20 g of psyllium husks (grounded I think) and make buns and other things.

      You can use any recipe on the Internet and just use Victoria’s 2.0 flower that’s what I’ve been doing lately I find a recipe matter where it doesn’t have to be keto they’re better anyway if they’re not a keto recipe and just exchange the flower for equal parts

    I used bamboo fiber(Zimmermann)50g with almond flour(Blue Diamond)190g and whole psyllium husk (Now Foods)40g to make Heavenly Fan's Keto Vegan Crusty Bread buns. Turns out so good, but doesn't have a crusty crust. The crust is soft the way I like it. I make these buns every 5 days since they are so good plus it's the first bread recipe that actually works for me!

      @@traceygreen6633 if you look at Heavenly Fan's recipe it is basically the same except for the above changes. Also, I added 1/4 tsp salt, use no sesame seeds, and didn't brush on oil before baking. Baked it in my Ninja oven which has a fan for 1 hr. It helps to view her youtube video. I used 1 and 1/2 cups water, but I think next time I think I can use a little bit more. It depends on your dough. Hope this helps. Good luck! P.S. make sure you use whole psyllium husks and I know for sure Now Foods is a good brand. Someone else mentioned the Anthony brand , but I have never used that one.

    Just thinking of a use for the bamboo fiber, I bet if you grate your own cheese you could add bamboo fiber to help keep it from sticking together and help absorb moisture. I know they add celulose as an anti-caking agent in store bought pre grated cheese.

    Wow! I did not realize there was such a thing as bamboo “flour”. TYFS because it definitely would cut the calories. I LOVE your original chaffle recipe w the almond flour and make these quite often. :)

      There is no difference between bamboo fiber and flour. Many call it fiber flour...it's called flour because many use it AS flour...but you cannot find bamboo flour that isn't bamboo fiber. There IS a bamboo supplement, which is different...and of course the bamboo fiber that clothing is made from 😅 You can also find the fiber flour bleached and unbleached. The fiber flour is much better used in a blend, as it it a lot of fiber to eat on its own. But it's amazing. I've been using it since June, and then started using it in September with Victoria's flour blends and its a game changer!!

    Unlike things like oats, I have searched before and bamboo fiber is the only bamboo flour, so either term works - unless someone can point me to a bamboo flour that's different? It's the new oat fiber in my kitchen and works the same except it has no flavor, which is a real improvement for most uses. Nice video once again!

    I have been using the bamboo fiber for several months now .... I use Victoria's Keto Flour 2.0 but I substitute 1 cup of the bamboo fiber with oat fiber ... With the oat fiber substitute it doesn't absorb quite as much of the liquid and the foods I make with it aren't as dry .... I did the math and figured it out by the grams... I use this flour to make the keto version of dream biscuits .... It's perfection ....

    I live in Thailand and there is NOTHING called "bamboo flour" or "bamboo fiber"....and Amazon doesn't seem to have it either. ☹

    I can't use Victoria's flour b/c it has oat fiber. I did try it in several recipes, and it worked great, but my belly cannot do anything oat. I was hoping I could but every recipes, while perfect in taste/texture, killed my stomach 😢
    I'm interested in trying the bamboo fiber 😊

      Not all of her custom flour mixes have oat fiber. Look up her chanel and look for her video ( or go to her blog/website) and look for her keto flour 2.0 variation - NO oat fiber - you can choose almond flour, or pecan flour. You only use Oat fiber if you want to - it's interchangeable with other low carb flours.

      Just found one the other night and it was so easy 2 1/2 cups 2.0 Victoria’sflour 2 teaspoons baking powder, 4 tablespoons sugar, 1 teaspoon salt 1 3/4 cup buttermilk, if you don’t have buttermilk you can make your own put 1 tablespoon and a half into your milk. Let it sit for 10 minutes that makes buttermilk I don’t use regular milk because I’m on keto so I use my creamer and I water my creamer down a little that’s it for the ingredients take a stick of butter and melt it into a baking dish. It’s going to be very sticky. Spread the dough out over the pan and make slices like you would be cutting brownies or something but bigger oven for 50 for 20 to 25 minutes, the person on the Internet if you want to watch the video is called butter swim biscuits, and his video will come up. It really was the best. Hope that was helpful.
