Here is the recipe for those who wanted it. I couldn't find it on the blog or anywhere so I copied it down as she did it and put it into my Keto recipe folder on my computer. I hope she starts putting her recipes somewhere so we can find them and cook them. This looked so good I just had to get it written down. Crust. 1/2 cup Almond flour 2 Tbls. Butter melted 1 teas. Sugar substitute (she suggested Swerve) Put all the ingredients in a small bowl and use your finger to mix it all together & form a small ball. Line six cupcake pan holders in your pan and take the dough and press it into each cupcake holder. Do not bake right then. Cheesecake: 8 oz. Cream cheese softened 1 egg ( I find that room temperature eggs work best) 1 teas. Vanilla flavoring 1/4 cup of Sugar Substitute 1 teas. lemon juice A few extra drops (about 20) of liquid stevia for extra sweetness Mix your softened cream cheese until whipped up and smooth.. Add the egg and mix again until mixed up. Then add the rest of the ingredients and mix well. Divide the cheesecake mixture evenly between the 6 cupcake holders and bake at 370 degrees for about 15 minutes. Watch the cupcakes. They should be lightly golden brown. It could take a little less time or a little more time depending on your oven. Let them cool in the refrigerator and enjoy. I personally will double the recipe and make 12 instead of 6 because 6 won't last long with my husband. He does Keto really good but he has a sweet tooth so I try to keep something sweet pretty often. Personal preference as to doubling the recipe. Enjoy
I made these! They turned out so great. Instead of using regular muffin tins I used the mini muffin tins so it’d be more like a cheesecake bite. This recipe made 18 mini cupcakes. Aprox 74 cals/ 7.1 fat/ 1.56 carbs/ 1.91 protein/ 59 sodium/ .33 fiber Per each cheesecake bite. 😁
I made these and doubled the batch. I have 5 in my family trying to eat better. They are delicious and simple to make. My 8 year old picky eater little girl loved them.
I make basically the same recipe but it makes 8 mini cheesecakes. I use monk fruit erythritol blend about a quarter cup and leave out the stevia. I also stick the crust in the oven for about 5 mins to toast them a bit. I cook them for 20 mins than I stick them in the fridge after they cool for 25 mins. I also add lilies chocolate chips to the batter. Sometimes I do peppermint extract and chocolate chips to make it a mint chip flavor. I pretty much keep these in the fridge and eat 1 daily.
This would be awesome with a pecan crust! Just grind up some pecans and add Swerve, vanilla and melted butter. I did this the other day and the crust was better than the actual cheesecake pie! LOL
Still one of the best mini keto cheesecakes out there. I’ve been making these since you first posted. I now make without the crust too low carbs and serve with purée strawberries

a tip for those who's cheesecakes come out cracked or sunken is to do a water bath when you bake them. I use this technique with my own recipe and they come out perfect every time :) awesome video nonetheless. cheesecake is a major weakness!

@Unknown Unknown really? I use pyure now definitely doesn't tastes the same. I would have to test that I used to make date sugar when I was vegan but I'm back on keto so it's stevia blend for now. Pyure and swerve doesn't spike sugar
*For a mini almond joyful version, try using just ground almonds &/or pecans w/coconut for the crust, then drizzle w/some melted SF chocolate of choice. Cheesecake candybar amazingness! The possibilities are endless for this base recipe~ the crust can be any flavor, & same w/the filling. We've done lemon shortbread crust w/raspberry in filling. Also, a maple flavored cheesecake w/pecans for crust- it just goes on & on folks. I've been making cheesecake variations for decades & this recipe is perfect ratios. Yes. I only use erythritol and erythritol blends in recipes where I can add cinnamon. The heat of the cinnamon balances the coolness if the erythritol. If I can't balance it with cinnamon i will add a few sucradrops. That seems to help balance the coolness as well. Also in sweet recipes using erythritol if you add peppermint oil, the coolness seems more intentional and not so offputting. So for example in my peppermint chocolate fat bombs the erythritol in the chocolate chips is somehow made less weird and cool because of the peppermint.
I don't know what the Carb difference would be, but they do have 4-Inch Mini Springform Pan Set - 4 on Amazon which I use in my mini Instant Pot I guess you could cut portion in half.

I’m doing this recipe, modified with some cinnamon in the crust and making a small cheesecake in a push-up pan. I did throw a “water bath” on the rack under the cheesecake to try to limit the browning.. we will see!

I stopped using pyure a year ago. I onlyuse allulose and or fermented cane sugar for baking off Amazon zero sugar, zero carbs, Both are perfect.

Yes that’s why I only tend to use monk fruit sweetener it doesn’t do that 👍🏼
