These are FABULOUS! I only made a half recipe of the crust, as we tend to like our crusts thinner and it was plenty and held together just fine even for eating as finger food. The baking time is the same for full or half size. I did add a 1/2 teaspoon of organic vanilla powder to the crust batter for a little flavor depth and it worked great! The cheesecake portion is nice and creamy and satisfying, but I have to say DO NOT SKIP THE LEMON CURD! Oh my goodness, that stuff was amazing and totally made the whole dish! Great stuff, Dot. My 16 year old son ended up having 4 of the slices in 2 sittings , I enjoyed the rest over 4 days . The curd topping , I had to do twice as I overcooked it first time , second time was perfect . I used a sprayed glass pan without the parchment paper and it turned out great! I won't bother with the paper in the future and I also didn't have any egg white to filter out of the curd either. Avoiding both those steps saved time and mess. The taste was AMAZING! The lemon zest pops the whole dish. I would think coconut flour would work as well, but I won't change anything b/c it turned out so well. The hardest part was waiting until it was chilled to give it a taste. Using the dish, it was easy to cut into 16 bite sized pieces. However, my tracker came up with 13g carbs per bite with 1g fiber along with 18g fat and 6g protein at 200 cal per bite. The carbs were mostly due to the 2.25 of swerve per serving in the final dish. Just be aware of the carbs!!

I always served a soup or casserole along with a couple desserts. This lemon cheesecake would be perfect. I always fix my dishes the day before. And this dessert goes a long way. Do you have any suggestions on which of your recipes that could be put together the day before then baked maybe that morning or either heated up like a soup? My classes always start at eleven and go around 5 to 6 hours. Usually serve my food around 1:30. I bought the lemons to make some lemon poppy seed muffins sometime soon. But I will definately make this lemon cheesecake I can hear my ladies now saying how good it is,,lol! Thanks once again Dot!
You could probably make the batter for the blueberry drop scones ahead of time, although I would add the blueberries right before cooking. Also I've made the crust-less pumpkin pie the day before baking and that worked too. With this, you may want to put plastic wrap over the curd (pressing the wrap on top of the curd) if you make it the day before -- that prevents a little film from building up.
Hi Dot! Cant wait to try this. Would you please clarify how much lemon zest goes into the middle cheesecake layer? You correct yourself in the video saying tablespoon, then teaspoon instead. But the written recipe calls for a tablespoon. So confused and don't want to make a mistake. Thx!
Ghee is a great idea for "gluing" the parchment paper down. I fight with that all the time. The bites look amazing!

Cooked my lemon curd over double boiler, or put pan over a pot of boiling water until thick. Didn’t need to strain!
I made a raspberry curd instead. The visual and the flavors were both excellent

You should try doing a- crust
:chia seeds, almond flour, 0 sweetener, and almonds, & coconut oil(butter) (blended/processed)
No baked just freeze.
Do you grind the chia seeds or use them whole? That sounds good for the crust.

Hi Dot! Cant wait to try this. Would you please clarify how much lemon zest goes into the middle cheesecake layer? You correct yourself in the video saying tablespoon, then teaspoon instead. But the written recipe calls for a tablespoon. So confused and don't want to make a mistake. Thx!
