Wow, this taste better than store bought with regular sugar. I never made a Cheesecake before. Made this and this is my Husbands's and my favorite keto dessert. Made about 10 cakes already. I place a mini loaf pan with boiling water in the bottom of my Toaster oven, then heat oven to 450 and bake as directed. Have not had a cracked cheesecake yet. We have this almost every night as a dessert. Thank you sooooo much! This is the best Cheesecake ever.!!!
One thing people want to remember if they do decide to go with the water bath or Bain Marie method is to wrap your spring form pan with a wide sheet of heavy duty foil or 2 so it’s sealed. Spring form pans aren’t water tight & nobody likes a soggy cheesecake. I also like to put a little piece of tape on the bottom joint where the 2 edges of the spring form pan overlap. That edge can be sharp enough to cut through the foil when you set it into the water bath pan & water can seep in…..learned that one the hard way.

I throw everything into my food processor (no crust ! ) I use an 8 inch plain , very well buttered , cake pan which will sit in a 9 inch cake pan with a little water . After the baking is finished , I let it sit for a few hours, While still warm ( just barely warm ) I invert the cake on a beautiful platter and sprinkle it with a tiny bit of Almond meal ( Trader Joe ). Sometimes I make chocolate leaves for the topping . I prepare them and freeze them until needed ! It makes for a sophisticated presentation !

Instead of a water bath I just place a 9x9 pan half full of water in On the bottom rack of the oven while it is preheating so the water comes up to temperature. Leave it in for the full backing period. works perfectly.
This cheesecake was delightful. We were all enjoying it very much. We did drizzle some melted Lily’s chocolate chips and crushed pecans on top. My kids didn’t even complain that it was keto. Winner!

Pre Keto I made plenty of delicious NY style cheesecakes but is so great to see there is a Keto version. This looks delicious. Be done the water bath with no issues abs have still had. Racking, but I just cover with a fruit Coulis or slices to cover the “sins.” 😊 I don’t see a springform pan size indicated. I suspect it’s the typical 10” when seeing your hand in the pan, but want to make sure as I have a small pan I have used in my pressure cooker as well. I really enjoy your channel, thanks!

I made it although I didn’t have a thermometer i tested by touch and visual, however it’s the next day after refrigerating turns out undone only near the crust was firm . I’m gonna buy a thermometer now and bake it again 😅, I’ll keep you posted
I have a question: I heard that some sugar alternatives like Stevia and Erythritol can crystallize if refrigerated - and so aren't good for cold foods like icecream, cheesecakes, pubbings etc. Have you found this to be true in any of your recipes? Which sweetener did you use for your cheesecake?

It might depend on the brand. I used Lakanto and didn’t have a problem. You could always use powdered sweetener if you are worried about it
Ive made several desserts with swerve sweetener and had them in the fridge for many days without any crystalizing. never tried ice cream though.
