Vegan Frankie Rolls: Mumbai's Favorite Street Food

    As a main or for lunch, this Indian Street food recipe is filled with flavour. Each element makes every bite one to be savoured. Though this recipe might take a bit of time, this one is so worth it! I can’t wait to hear what you think…
    Note: all the spices can be found at an Indian grocery store and sometimes in the international section of your grocery store.
    Ingredients:
    Roasted Vegetables & Chickpeas:
    1 Cauliflower, cut into small florets
    1 Bell Pepper
    1 can Chickpeas
    2 tbsp Nutritional Yeast
    1 tsp Garam Masala
    1 tsp Salt
    2-3 tbsp Coconut Oil
    Curried Potatoes:
    2 large, Potatoes, cooked
    1 tbsp vegetable oil
    1 ½ tbsp ginger, grated
    1 clove garlic, minced
    1 tsp cumin
    1 ½ tsp coriander
    ½ tsp chili (kashmiri preferred)
    1 tsp turmeric
    ¾ tsp salt
    Pickled Onions:
    ½ medium red onion, sliced
    ½ cup vinegar
    ½ cup water
    3/4 tsp salt
    2 tsp sugar
    Spices: 1 bay leaf, 1 anise seed star, ½ tsp fennel seeds ½ tsp cumin seeds, 2-3 cloves 6-8 peppercorns,
    Chat Masala:
    1 tbsp cumin
    1 tbsp coriander
    1 tbsp mango powder
    ½ - 1 tsp Chili powder
    ¼ tsp black pepper
    ¾ tsp black salt, kala namak
    ¾ tsp sugar
    Raita:
    1 cup vegan yoghurt
    1 small cucumber or ¼ of an English cucumber
    1 Tbsp lemon
    Salt to taste
    2 tbsp Coriander, chopped

    Roti, Lachha paratha, or Chapati (store bought)
    Instructions:
    Heat oven to 425°F
    Peel and chop potatoes. In a pot filled with hot water, boil potatoes for 20-25 minutes. Check that it is fully cooked.
    In a separate pan, heat oil. Add ginger & garlic to the pan and cook for 30 seconds. Add cumin, coriander, chili, turmeric and salt and roast spices for 1-2 minutes. Add potatoes and mash. You can add a little bit of water (about ⅛-¼ cup) to make it easier to mash. Set aside and keep warm.
    Cut cauliflower into small florets. Chop bell pepper into small strips.
    Place on a baking tray with chickpeas. Sprinkle nutritional yeast, garam masala and salt over vegetables and chickpeas. Add coconut oil and mix all ingredients together. Put in oven and roast for 20-25 minutes. Remove from oven, set aside and keep warm.
    To pickle onion, first slice red onion thinly. In a separate bowl add vinegar, water, sugar, salt and spices and stir all ingredients together. Add onion to vinegar mix and set aside.
    To make chaat spice mix, in a separate bowl combine cumin, coriander, mango powder, chili powder, black pepper, black salt and sugar. Set aside.
    Make coriander chutney.
    Heat up roti, chapati or lachha paratha.
    To assemble:
    Place roti/chapati/lachha paratha on a piece of parchment or aluminum. On the roti/chapati/lachha paratha, spread mash potato, top with roasted cauliflower, peppers, chickpeas, & pickled onions. Spoon raita on top and then coriander chutney. Sprinkle on th chat masala. Roll, wrap and eat.
