Vegan Tandoori Marinade: Burst of Flavor for Plant-Based Grilling!

  • Tandoori Marinade and Tandoori Kebabs
    Savoury and Spicy! Tandoori Marinade is a favourite Indian marinade when grilling or baking seitan, tofu or vegetable skewers in the oven. I also use this sauce as a base for an Indian style pizza. I wonder what way you will use this tandoori recipe…
    Ingredients:
    1 cup vegan yoghurt
    1 tsp ground cumin
    2 tsp coriander powder
    ½ tsp garam masala
    ½ tsp turmeric
    ½ tsp garlic, jarred
    1 tbsp ginger, jarred
    2 tsp kashmiri chili pepper
    2 tbsp paprika
    1 tsp salt
    2 tsp vegetable broth powder
    1 tbsp tomato paste
    ¼ tsp pepper
    3 tbsp lemon juice
    Ingredients for Marinade:
    Vegan chick’n/Seitan
    Tofu
    Red onions
    Peppers
    Mushrooms
    Instructions:
    For Tandoori Paste/Sauce
    In a bowl with the yoghurt, add the spices: cumin, coriander powder, garam masala, turmeric, minced garlic, ginger, kashmiri chili pepper, paprika, salt, vegetable broth powder, pepper, tomato paste and lemon juice. Mix all ingredients together well.
    For Kebabs:
    Soak skewers in water for 15-20 minutes. This will help to prevent the skewers from burning
    Press tofu. Cut into cubes. Add to Tandoori Sauce and mix. Cover and refrigerate overnight. (If you are making the skewers on the same day, marinate for 2-4 hours as a minimum.)
    Set oven to 400°F.
    Cut vegetables such as onions, peppers and mushrooms, so that they are large enough for kebabs.
    Assemble kebabs by arranging marinated tofu and vegetables on skewers. Brush excess tandoori sauce on the vegetables.
    Cook for 20 minutes turning over once.
    Serve with rice.
    If you are doing seitan wings, here is the dipping sauce I used:
    1/2 cup vegan mayo
    1/2 cup vegan yoghurt
    1/4 cup fresh cilantro
    1/2 a green chili
    1 tbsp lemon juice
    salt to taste
    Blend all ingredients together in a blender or use, food processor or an immersion blender. Now place in a bowl and serve.
