being brazilian, if you want to really follow the tradition around here, first you have to cook it in a grill and have people over to eat it if, gotta get garlic bread to go with it, farofa and accompany the meal with beer. Plus, I usually cut it horizontally against the grain but im not sure if people do it differently in other parts. anyways great vid

This is a misconception but cut and marbling score is way different. I’m sure you know that but pichana is the best cut of steak. wagyu is the best grade of steak. Take a New York and ribeye with the same grade as the pichana and then do the test. It’s not the best steak but simply the best cut from the cow.

Whats your reasons for not liking grass fed steak? I also got the impression grass fed made for higher quality meat, or have I been sold a lie by big grass?
They tend to have a much lower marbling content (less fat). Which i believe where most of the flavor comes from. Also, just the price of it turns me off. I feel like i'm paying 50% more but being cheated that beautiful fat. Just my biased opinion though lol
Liked the video but you spent more time talking about corn then about the actual meat taste, i dunno, it would've been nice for you to actually talk about how picanha taste and how it compares to other cuts of steaks, for me picanha has a very unique and recognizable taste (a brazilian can always tell if the cut is actually picanha or not just by taste) other cuts of steak have a normal beef flavor but picanha is a strong and different flavor.

You cut it against the grain after it’s cooked, when your eating it. That’s why he cut it across the grain before that.
