It's meant to be put on right before going on the fire, no rest, and it will kind of create a little crust on the outside and an amazing crispy sear. Then you beat it a little to drop the excess salt before serving.
What happened to the Santa Maria grill? That would have been the best way to cook this, that way you could control how much heat it gets, avoid those excessive flare ups, have a non-melted glove, and the combination of charcoal and wood give it the most authentic flavor you can get out of a Brazilian style picanha.

Hey Sam, Great Recipe! I've found that with Charcoal, it's best to divide the Grille into a Hot and Cool Zone, just like you taught me with the Flat Top! Especially with Wagu !

@@tj5546 not required, but you can adjust from your taste. If you salt it a couple of minutes before, typically the salt penetrates the meat.

As a Brazilian, I must say you nailed it. Did the proper way. Only salt, skewered, rare/medium rare = perfection. A 10 /10 experience for sure.
