Just made this for my wife. The avocado oil makes all the difference! I always used olive oil prior to this. The twice baked potatoes were the star of the show! I added a little crispy bacon and some cheddar crumbles.They came out perfect. My wife hated spinach until last night. Your creamed spinach was "heavenly" according to her. She also loved the lettuce wedge salad and now wants the all the time. I think I've created a monster... Going to try your hangover burrito tomorrow. Wish me luck!

I feel like that process for the frozen spinach was more effort than just blanching actual spinach
Only because he microwaved it, otherwise you could've just let it thaw naturally and chucked it into the pan.
