Here are two tips from someone who has been making baked mac for over a decade. One, you don't really need to shred the cheese. Once you have your sauce liquid warm, just slice off small pieces from the block and toss them in. Two, you can add some gruyere cheese, in a 1:4 ratio to the cheddar which will give it a more unique flavor. So that's not actually Southern style, but a twist on it. I have never tried using the Velveeta.
Count yourself lucky! My husky can be dead asleep in another room! The minute I drop something it's like she magically teleports & catches that shit before it ever hits the ground!
So, I made this...and it was incredible. A friend of mine said it was the best Mac & Cheese she ever had in her life. Awesome. But when I made it, I realized that I didn't have enough bacon. It’s all in the vacuum packaging for Velveeta. Plus, it’s what’s called shelf stable and doesn’t need to be refrigerated. It’s very high in sodium and fat. That’s what makes it sooooo good.
Looks delicious, I'll try this version. However, as a child of the South, the absence of ground mustard, a roux and some other seasonings is mildly disturbing. However, it looks amazing, and we are debating great versus fantastic at this point 🤷🏾♂️

As a resident of Alabama, this recipe is pretty close, but you'd need to make a roux and add the cheese and milk/egg mixture to the roux(for a silky smooth cheese sauce), before adding it to the cooked noodles. Also, it's missing a metric f*ck ton of seasoning, lol. toss in some smoked paprika, oregano, cayenne pepper, etc. Your life will be changed forever, with the real baked mac.

I have a perfect mac and cheese recipe and it’s similar to Panera’s. Because I use a roux to thicken the sauce and use aged extra sharp white cheddar which I freshly grate on my own too and sliced white American cheese. I use both whole milk and heavy whipping cream.

I just wanna say you are so right about cast iron. I was digging in my mom's yard and about three feet down I found an old skillet, easily over a hundred years old. It took me almost a year to get it back to working condition and now I have a cast iron. It doesn't look good but works. Seasoned with black strap molasses. One day I'll get a new one but for now I love it

I, usually, end up chopping the cheese up with my knife. It's fast, less dangerous, and much easier to clean up. Plus, it works. I've gotten good at cutting down to pieces that melt well. :/. I absolutely hate shredders, and I'm not fond of paying so much for pre shredded cheese. Plus, I like having more options for what kinds of cheese I use.
There's nothing wrong with pre-shredded cheese. It does dry out faster than block cheese because it has more surface area, but just use it before it dries out.
The only thing you’re missing is a little paprika over the top! Otherwise it looks amazing!! If you brought that to the house here in Birmingham we wouldn’t kick ya out!

Absolutely great. I added some diced green chilies to kick it up a little. Also used Tony Chachere creole seasoning in place of salt.

Max’s use of “That’s what she said,” isn’t *too* much. Y’all are too sensitive. 😂 There are times where he blatantly missed the opportunity to use it though. I find myself saying it during certain episodes, and I’m like, “OMG, Max. Did you really miss that opportunity?” 😂 Maybe every episode is too much... and maybe I’m too immature, but I say keep it up. Also, Sam, there was a missed opportunity to mention WAP in this video. 😭

True southern doesn’t usually have bacon pieces. Needs ground mustard, sometimes a little cayenne. Still looks good ! Thank you for not ruining it with breadcrumbs 😆😄
