- He belts out arias and recites Dante while serving the best meat in Tuscany. The eighth-generation butcher Dario Cecchini adores bistecca alla fiorentina, a thick steak of Chianina beef, the largest breed of cattle in the world. He serves it at his restaurant-cum-butcher's in Panazano, Tuscany, where he puts on a rustic show for hungry guests from all over the world, who come to see the famous butcher in action. He believes in using every part of the animal and showcasing regional products and recipes.

Well it necessarily requires a lot of work to raise those cattle. They are more like family members than business property in this system of small scale farming.

Been there many times, last time in 2012. Nothing like entering the small butchery with the deafening music of AC/DC blasting all around, then the huge chef himself with always the smile on his face serving salame and other cold cuts, the glasses of wine always full. Dining at the long table with guests from all over the world is an experience in itself. Love the man and his team.

As an italian guy, I can tell you that he's an OG tuscan. His accent is so strong, in nearly every word
He is truly an amazing individual…we have been fortunate to meet him on several occasions…a very friendly and passionate man! Panzano should be on your travel itinerary….one or our favourite places in Italy…hugs from Canada 🇨🇦 Dario!

@@amit7257 I don't want to bash on Dario, he is amazing and his steak looks friecken delicious!!! It is just Michelin stars tend to go to innovation in the culinary world. Again, that does not mean that Dario doesn't have the same quality food or even better than some Michelin restaurants. If you ask me personally as a chef, simplicity makes perfection , especially when you don't want your excellent main ingredients to get lost in a mess of tastes. Some chefs argue thought that you can construct amazingly layered dishes, which is also true. Each to his own i guess.

i orderd sometimes steak and other italy stuff on gustini shop but only 59 euro kg from this steak there !!!! why i never orderd !!!!!!!!!!! can u pls explain me !!! im pissed now and hungry :D
we wasted so much meat in the past years and in restaurants why not orderd good meat in internet !!! oh boy im mad now

My wife and I had a fantastic meal at Dario's place in Panzano in Chianti last fall, a truly once in a life time experience.
Wine ,steak, and a good cigar. God's gift to humanity. I actually visited his restaurant. He said if you need the meat to cook more ,please leave a go to McDonald's.

Had it twice since my xfather in law is living in castillion fiorentino. Bbq it with olive oil which I was putting it on the 1, 2 kilo bisteca with a small brunch of rosemary. Even my xfather said perfectly cooked. My daughter that was nine that time said that the steak was better than chocolate 😊. Now she is 22 and we still remember the taste.

I have a lot of respect for this man. The beef marbeling looks superb! I've always been conflicted about eating our beef. Perhaps it is because they die at around 2 years of age. I've cooked chicken in a similar way, I will try this for sure!

As a carnivore and meatlover it’s a must to eat at one of his restaurants! He‘s a joy to watch and his staff share the same enthusiasm. And the meat you’ll eat is out of this world good!
Dario's a master marketer but you want to go to Osteria Nandone in Mugello just North of Florence. In the middle of nowhere and you need to call 3 weeks in advance. The best.

@@themeataroundtheworldshow690 You will not be disappointed. It's another place that has been in the family for 150 years. I'll warn you in advance, there is no menu. When you arrive at your table will have all the antipasti laid out and what they offer depends on the season with everything locally sourced from within a couple of kilometers. For the second course, he does only one thing and it's bistecca all fiorentina which is farmed raised, and grass-fed nearby cooked over a roaring fire right in front of you. Ask to eat where they cook the steaks. Paolo is the best!!!

This man is absolutely correct. No salt and no marinade, just meat and fire 🔥 when is done just a pinch of salt. That’s how you eat beef! I repeat, beef has tons of flavor, no salt, no pepper, just beef and fire, rare and a pinch of salt when is done! 🥩 that’s how you eat beef! 🥩

The best farmer will give an animal that is going to be slaughtered for food, a life of great days with one bad day. Each of us owes one death and if you can imagine someone making that day as fast and painless as possible, you are thinking of a very good farmer.
I cook a pretty nice steak myself so it would be a quite a life time exlerience to taste something from a master's best work.

A few years back I spent a few days in Florence. I did notice a lot of restaurants had sandwich boards outside advertising steaks. It somehow didn't dawn on me that steak is a Florentine specialty. Oh well, maybe next time.
It is. Plus soups and cured meats. If you search for Pizza and Spaghetti, down south. LOL
I have made this from aged scrub cattle. On the fire. I can still taste it. The Bistecca must be at least 4" / 100mm thick.
