People out there just don't appreciate audio quality so much, it makes all the difference and this is the place for that to hear all the cooking and background and noises out, see if it can be improved even more, certainly it's better than most youtube "HD" videos out there, either people recode or do horrible things prior uploading IDK, I'm not that of an audio guy as much as I can't be more specific, but this channel would really become even more credible if it did some really good audio quality which is lacking so much out there. I really like this no-person format as well, no talk, no selfies, no chewing, no blabing, really like this type of content for a change, great channel !!!!!!!

And to respond to another comment, it isn’t snobbery, it just isn’t factual. Like if you ordered an American-style hamburger off a menu somewhere and got a deer burger with butternut squash topping. Maybe it’s good, but it isn’t snobbery to point out that it is not an American-style hamburger. All that said, I’d like a bite of your steak...

Bistecca alla Fiorentina is supposed to be RARE, almost like raw tuna, served with salt, Tuscan olive oil and lemon. I could see all the Italians roll their eyes.
Usually bistecca is eaten on its own, but some ppl, as you said, also use lemon and olive oil and that s perfectly acceptable, although you won't see that happening in restaurants or ppl would think that the quality of the meat is poor. If you want that kind of condiment you have to specifically ask for it. I'm glad to see someone who knows Tuscany traditions, thumbs up for you.
Following mistakes in my opinion: 1. Turning too many times: 6 min. at least each side and up to 5-7 vertical on the bone is enough 2. By adding erbs butter (disaster!🙅🏻♂️) 3. Overcooked: use a termometer (much better than timing), when inside reach 55 °C, you are done!
1. By making it turn more times it cooke more evenly and you get pink all the way thru 2. That’s his own preference 3. It’s not overcooked he probably wanted his steak medium
