Always use the Kombu! Daikon radish, very nice work! I often braise and de-glaze, great technique. I would love to have such great ingredients in my local store, not much diversity here sadly.
This is a youngish (small) Mahi Mahi. They are also known as Dolphin fish and Dorado and they are delicious! It should be mandatory for cooking videos to list the ingredients they use!!
Yo looks yummy as you jam our faces in for closeups. So? If you're detailing the cook, why not tell us what you're shaking/pouring onto the fish?? Or are these nuclear secret codes? lol Enjoyed as far as it went.
Living and fishing in Hawaii I’ve caught and cleaned literally hundreds of Mahi. Never heard of anyone scaling a mahi though. You cut thinly up the back and belly(never cut though the guts) then you grab a cut flap of skin near the head and pull the skin off towards the tail. Done. It won’t work though if you try that fron the tail end. Pull head to tail and that’s it. This guy obviously doesn’t know much about mahi. But the dishes looked great. Aloha no kakou.
Brian Walsh :3 what is ur favorite 🐟 in Hawaii ? And is there any local places that u want to recommend? ( to eat ) !!! I will have a trip to Hawaii next week and I really want to know sth from someone from there
احترافية رائعه 👍 ولكن احزن على حال الفقراء اللذين قد يشاهدون هذه اللذائذ ولا يقدرون على تناولها 😥 Very professional and seems 😋 but felt sorry for the poor people who can see these dishes and not able to eat 😥
My ancestors are from the island of Maupiti and we dont eat Mahi Mahi due to a story..... A tourist couple went to Maupiti. In Maupiti locals use to catch Mahi Mahi, that was one of their favorite fish to eat. One day the couple went for fishing, the husband not noticing where his wife went for a while started to search for her. He find her battling for her life with a a big Mahi Mahi, the fish swallowed her. He cried so bad because he couldnt find the Mahi Mahi anymore, he called the village to help him look for his wife. One guy came back from his fish hunting caught a Mahi Mahi, a huge one, the one who ate the wife. The fisherman was surprise to watch his people moaning the lost of the tourist woman, but his fish was still living as if trying to get back in the sea but the fisher man didnt let go. The tourist husband told the fisherman to let go of the fidh because his wife was inside, The fisherman didnt believe him but instead he just let the fish in a big bassine of sea water. The husband looked closely the fish and could see the shape of a body in a feotus shape. He knew the wife was there, dead. From that day Maupiti people never hunt the Mahi Mahi. That reminds them of the woman inside the fish and to respect the husband they chose to never eat that fish even outside of the island. If you notice, thr Mahi Mahi once caught, even dead he is still crying. Tears still falling from its eyes, and that for the Maupiti people these are the tears of the wife. So no matter where I go, the country I visit I never eat Mahi Mahi.
Not "Giant" Simply a full grown "Bull Male Mahi Mahi" , first mistake, notice the sunken cloudy eyes - this fish was not caught same day, but perhaps 1-3 days old. Interesting way of filleting the fish. We like to see the preparation in several ways. Sauce, poached for soup, grilled head , breaded and fried then pan smoked. Impressive. Thanks for sharing.
Many way too cool this big fish/ boiled and grill r good way for diet/ lucky I’m full before c this/ way to cut fish and tomato is nice/ I watched this vdo proper and advertise is 6 times. :)
I have tried to find a recipe for the cream, but it looks like pole beans mashed with cream and Mizuna (mild, peppery). If I were making it, I would choose Karashi (mustard) powder or Shiso (Japanese Basil). The clam dish is most probably Yosenabe.
A lot of recipes you can make, out of one delicious fish, mahi mahi, I love it. Very delicious.....
i've watched a lot of these and that one was, by far, the best looking dish I've seen, and it made me so hungry.

Amazing skills. Well done, filleting, cooking and camera work.
Caught one of these off the coast of Thailand. Had a sizeable fillet BBQ'd that evening and it was the best fish meal I've ever had.
This makes me want to visit Japan!

I've tried Mahi mahi. I didn't really care for it, but serious respect for this guy who cleaned and prepared the fish.
of course he did
Is it tasty? I am curious.
Very tasty , my favorite fish , but I live in Florida and we live on that fish.
Dave Brown thanks! Definitely will try to eat it if I have a chance.
in my opinion, it is a bland fatty tasting fish next to cream dory. If you don't like fishy taste, then this is for you.
I love you channel 👍
OH MAN that looked fantastic!
Beautiful, example of cooking fish correctly. Golden brown outside lovely white on the inside. Great job with the dishes

Waw.. amazing.. I like your vidios.
Welp, at first I thought he was going to miss the meat in the head. Boy was I wrong lol
I can eat all those dishes above. All look delicious whatever preparations. I normally just steam my fish with spices. Saves a lot of time.
These dishes look great. Would like to know what ingredients were used.
texastony1946 if you pause the video you can see the spices used to make it
the first one looks like a make shift teriyaki sauce with mirin, soy sauce, salt and minced ginger.

The fried fish is a basic Panko-crusted fish. The last dish looks like cherry blossom wood-smoked fish with sesame oil.
I have recently discovered how delicious mahi mahi is and I'm interested in how to prepare it.
All of them looks delicious 👅
Thanks
