i know this reply is one year late but if you travel to seaside areas in different countries you can probably find shops that sell fresh native fish and some of their native seafood

PSA: that darkened part he cut off is bloodshot and is not good to eat. It is where massive amounts of trauma have occurred to the area. I get it alot with red meat. I've been a hunter and recreational fisherman my whole life. I use bows and rifles for hunting and always get bloodshot around the area of impact. Same thing with a fish if it's really big and gets dropped
Apart of me still feels like you could get some kind of use out of those bloodier parts. Maybe using them to make a black broth-based soup or something

The dark muscle just below the head is probably that deeply coloured because it's what the fish uses to move its fins. You see a similar phenomenon in poultry - the dark meat is the muscle that's been heavily used by the bird, which means it's more developed and has more blood vessels.
That could be one of the reasons the home raised hens have darker and relatively stronger meat than commercial chicken as they get to move around much more.

The Opah is a fantastic fish!!! It’s the only fish that’s truly homeothermic, meaning it’s warm-blooded like mammals! That may be why it’s similar in taste to tuna but also very different!

I like all the information you shared about the fish and the variety of dishes you made with it. The thick skin with the layer of fat would have been good deep fried (like a pork rind/chicharon) or simmered for a long time in the same sauce you used for the eyeballs (but add peppers and garlic in there as well).
You've eaten plastic too. The flakes were just too small for you to notice. Anything you eat that comes from teh ocean has ingested plastic at some point. Thats a sad reality.
It was proved that human feces contain micro plastics. It is toxic or not, you don't know yet. Cows are surgically adapted a drain hole to remove plastic materials that they eat accidentally.
I have lived far away from the ocean in the US my entire life, so my brain is struggling to see this as a real animal that exists even though I'm seeing it taken apart before my eyes. Thank you for sharing your process, your good attitude, and this strange, tasty ocean creature! 🙏🏻

@@ink3539 everybody in south east asia loves fish heads, the eyeballs can only be rivaled by the fish belly, two of the best tastiest parts from the fish are definitely eyeballs and fish belly, its fatty and flavorful.. but there's a way to eat fish eyeballs cause there are 2 unedible parts there, 1st is the plastic ball (or cup) surrounding the eyeball, its is transparent and you don't eat that, next is the center part of the eyeball which is like a small bb pellet (or marble size if the fish is large), it is quite hard like a pearl, you don't eat that too.. most of america and europe miss out on fish heads cause they only use the fillet meats.. that's why we miss anthony bourdain cause he could eat like a true asian

As far as I can tell from *actually watching the video* the only parts that are inedible to humans are the skin (which is what he tried) and bones. He ate the meat and even the eyeballs! The animal was killed because humans are omnivores, and this particular human person lives within a community where the eating of fish is acceptable and common. Look, I don't have a problem with vegans (which I assume you are). I even try to minimize my own consumption of animal flesh, I'm down to maybe once a week at most. But you don't have a right to make comments about what other people choose to do that is 1)healthy, 2)legal, and 3)not harmful to others. If you want all the humans of the world to stop killing animals for food or other reasons (and I'd like that too), just no that pretending you're better than other people by calling them disgusting animals is probably a great way to get them to kill more animals just to spite foul vermin such as yourself.

The Opah is a fantastic fish!!! It’s the only fish that’s truly homeothermic, meaning it’s warm-blooded like mammals! That may be why it’s similar in taste to tuna but also very different!

I like all the information you shared about the fish and the variety of dishes you made with it. The thick skin with the layer of fat would have been good deep fried (like a pork rind/chicharon) or simmered for a long time in the same sauce you used for the eyeballs (but add peppers and garlic in there as well).

You've eaten plastic too. The flakes were just too small for you to notice. Anything you eat that comes from teh ocean has ingested plastic at some point. Thats a sad reality.

It was proved that human feces contain micro plastics. It is toxic or not, you don't know yet. Cows are surgically adapted a drain hole to remove plastic materials that they eat accidentally.

I have lived far away from the ocean in the US my entire life, so my brain is struggling to see this as a real animal that exists even though I'm seeing it taken apart before my eyes.

@@ink3539 everybody in south east asia loves fish heads, the eyeballs can only be rivaled by the fish belly, two of the best tastiest parts from the fish are definitely eyeballs and fish belly, its fatty and flavorful.. but there's a way to eat fish eyeballs cause there are 2 unedible parts there, 1st is the plastic ball (or cup) surrounding the eyeball, its is transparent and you don't eat that, next is the center part of the eyeball which is like a small bb pellet (or marble size if the fish is large), it is quite hard like a pearl, you don't eat that too..
most of america and europe miss out on fish heads cause they only use the fillet meats.. that's why we miss anthony bourdain cause he could eat like a true asian

vegans complain about the treatment of animals and people eating them, if they treat them humanely while killing them to eat that's fine and also keeping in mind that they use as much meat of the animal as possible so less goes to waste. I love meat, love animals but could never ever be vegan!!

@@josephinehogg3629 Hey Josephine, you can fuck right off. He tried to eat a small part of a fish that he deemed inedible. As far as I can tell from *actually watching the video* the only parts that are inedible to humans are the skin (which is what he tried) and bones. He ate the meat and even the eyeballs! The animal was killed because humans are omnivores, and this particular human person lives within a community where the eating of fish is acceptable and common.
Look, I don't have a problem with vegans (which I assume you are). I even try to minimize my own consumption of animal flesh, I'm down to maybe once a week at most. But you don't have a right to make comments about what other people choose to do that is 1)healthy, 2)legal, and 3)not harmful to others. If you want all the humans of the world to stop killing animals for food or other reasons (and I'd like that too), just no that pretending you're better than other people by calling them disgusting animals is probably a great way to get them to kill more animals just to spite foul vermin such as yourself.
