    I was one of 12 kids. We never went hungry. My mom was a plain, simple cook. Small portions of meat, garden goodies etc. We never snacked between meals or in the evening. People today spend tremendous armounts of money on snacks and stuff that offers no nutrition. Buying single serving snacks and lunch items is also a big expense. If times get tough, people will learn really fast.

      I agree to an extent. We don't usually snack unless it's fruits or veggies with homemade ranch or a homemade muffin. I have competitive swimmers who are burning thousands of calories a week, so I do make a lot of homemade snacks and in a pinch I will buy some for swim meets. 😊

      @ashleynelson892 I was a competitive swimmer until I was 12. Then I was a distance runner. I loved swimming and it’s important to me that my kids learn to swim well but they aren’t in organized sports at this time😅

    There were five kids in my family and no extra money, but my mom was a great cook. We weren’t then aware of how blessed we were that she was so resourceful… we ate well, if plainly. Many recipes were along the lines of “Poor Man’s Lasagna” or “Poor Man’s xxxx.” Mom stocked up whenever she could.
    We are financially better suited now, but the mindset remains. It’s a blessing.

      The mindset does remain. There were 7 kids in my family and much the same. When my parents were together we didn’t realize any different, we didn’t realize we were poor because all our needs were met. It wasn’t until my father left and remarried, and we went into public schooling that we realized how poor we were. My mom fell off the rails and life was never the same. I pray my family stays together and that my children never experience the hardships and trauma I endured after our family fell apart. I do remember the good times, too. 🌻🌻🌻

      My parents lived through the depression. We were raised with that consevative mindset and tried to pass that on to our children. My generstion learned home economics. Do they even have that now?

      @carlahabeck4051 we do because it’s homeschool but I don’t think they have it in school anymore. They are getting rid of electives in favor of standardized testing.* I think*

    Simple whole food meals tend to be more filling. Less snacking here. Buying in bulk with proper storage also works well for me. Frees up $$ for freeze dried item I can't grow.

    You are so right the ham is a great protein in cost and flavor!!! So is the chuck roast you can get them with a sticker to we have found on Monday morning they tend to have the stickers on the meat for mark downs. I now only buy chicken thighs now over breasts I like them better. You can also ask the store when they discount there meats. What is the poultry seasoning brand please I have used Bells and I like it. Also your meals taste good!!! They look good to!!! the other thing you do is brown your meat which makes such a big difference. Also you are flexible you have a basic recipe or things but you adapt. Also some canned tuna and chichen that is shelf stable.

      The “poultry seasoning” is poultry seasoning. That’s what it’s called on my container. I have the Kroger brand seasoning. The ham was a score cause deli ham is $10/lb and I got 2lbs for $8. Thank you for watching Wendy! 🌻🌻🌻

    These skillets/stir fry style meals is how we eat A LOT. I love grabbing leftovers from the fridge, throwing it all in a pan like this and eating it up.
    We are very strict on trying our hardest not to waste food. ❤ We will can 1/2 gallon jars of soup, enough for a year's worth and I will add noodles or rice, half jar more water, warm it up and that'll be a meal for 2 day's for us. I grew up kinda poor, so pinching pennies and making many meals with little bit is how we roll.
    Hardly ever buy snacks, I try to make everything from scratch. This year we were blessed enough to get enough venison for hamburger, sausage, jerky, and a few different kinds of sandwich meat. ❤

    This meal looks amazing ❤Thanks for all the helpful hints and I especially want to try the potatoes in the instantpot. My mom used to always bake a few extra potatoes for dinner and the next day she’d use a cheese grater to make easy hash browns. I still pick up the bulk bags of rice whenever affordable because it’s cheaper per pound and last a long time. But if I couldn’t buy the big bags the dollar tree is perfect for affordable rice and beans to get that pantry stocked up.

    Happy New Year! You can never go wrong with potatoes o'Bryan. Another favorite of ours is making rice with pineapple chunks or crushed with the juice (allow water and juice level equally) and diced green red yellow or orange peppers to serve as a side dish. Another great vlog Katie.

    Honestly, i dont know how this amount of food fed 7 people without being hungry again an hour later. I mean, that would be what, about a half cup per person?

      I think you saw my little kids plates. It was a 12inch 4.5quart pan worth of food. Everyone had plenty and there was a bit leftover. 🌻

      @@RowesRising We are doing the best we can. December has been difficult for my family. At the beginning of the month our 6 year old Goldendoodle had to have surgery and it was suspected that she had cancer. Biopsy was sent to Texas A & M where every vet was called in to try to figure out what was wrong. One vet thinks she has cancer, the rest diagnosed something rare and treatable. Then my husband has spent two plus weeks at doctor's offices, two ER visits, and has been in a wound care hospital for almost two weeks. Was there for Christmas, New Years and possibly his birthday later this week. He had a grapefruit sized blood clot in his leg (not in vein but under the skin). Now the wound is a huge ulcer. He has Lymphedema in his legs after double knee replacement. It has been a nightmare! I am exhausted, stressed and worried. It will take weeks and weeks to get this healed.

    If you are on a lower good budget, prices are continuing to increase as you buy weekly groceries will your organic foods have become a sacrifice? Most people on a low income budget can't purchase in bulk or organic (as much as they would love to) but for a temporary income loss or other emergency non organic may be an only option. Is non organic something you are totally opposed to? Are there foods that you purchase that organic does not matter?

      We aren’t buying all organic. I was buying organic bulk foods prior to job loss, it’s not a priority at this time- it’s a luxury. I do try to get most dairy products for my kids organic since we cannot afford raw milk from a local farm. But it’s not always possible. I also try to get the clean 15 if possible for produce instead of organic. In my next grocery haul- I bought a few boxes of organic cereal that was on a mega sale- it just depends if I find organic food on sale less than conventional🌻🌻🌻🌻

      You are speaking the truth. Reality hit hard this month that the savings is dwindling fast and we started getting paid but that first check went to pay the CC we were living on. Now we are back to broke but we were gifted gift cards for groceries from some sweet subscribers that will help make ends meet until we are back to normal income. I’ll be doing the #everybitcountschallenge as well this month (January) to use up our stocked pantry and prepare for clearing out our food stores in anticipation of moving later 2024.
