So I have very successfully made these gluten free 🎉. They are absolutely delicious. There’s a couple modifications that are needed. I used King Arthur GF and it took 2 1/4c. It doesn’t rise like gluten filled does but it does get bubbly. It also remains more of a fluffy batter. I also had to use ring molds because when I didn’t they flattened more however still were delicious. Hope that helps someone. Oh also my sourdough starter is a brown rice flour based starter. I started my sourdough starter and used just regular gold metal all-purpose flour. Bleached, my mistake. It looks and smells good so I will try it this weekend and see what happens. I am just a plain old housewife that is new to all this. At 62yrs old I am trying to teach this old dog new tricks.

I thought of you because I remember you having to have cotton in your ear a while back and not feeling good then! Looking forward to spring and warmth and sunshine! I love sourdough and enjoy working with it. I also enjoy watching how others bake with theirs. Everyone is a little different and you have to find what works for you! I would say yes to selling your starter but I don’t know how you will find the time to do it! You are so busy!

I have a bummed immune system from my autoimmune disorder- I swear I catch every bug. I’ve had terrible body aches and pains, exhaustion etc today. I moved from the bed to the sofa to the floor and back to bed today. No one else in the fam is sick right now but all the kids got over passing around a respiratory illness over the past few weeks- maybe it finally got me🥴 We have had some stress this week with Aaron’s health- I’ll share more on Mondays live. I think the combo stress and autoimmune issues keep me in the sick/recovery/sick zone most of winter, unfortunately. Can’t keep me down too long!

I would still do the starter. You can start your own little shop of things to sell. Eg; sour dough starter, elderberry tonic, whatever you want. Great vlog. I'll have to start up my sour dough starter again. I was making bread while watching this vlog. Since I have carpal tunnel and arthritis in my arms and hands, I use my bread machine to do all the work for me on setting 8, then I bake it off in bread pans in my oven. I suffer from eczema too. I found a lotion that helps a lot. Golden Bond extra medicated, in the green container. Because when you wash your hands dozens of times a day, you dry out the skin and then eczema pops out. So, just keep moisturized, especially when you retire for the night.
Something that has really helped our dry rashy eczema hands is making our own foaming soap. We use castile soap and water in a foaming pump. We used to have so many issues with dry hands and this has basically eliminated it.

You are so right about technique with sourdough. I'm in MO, and what works for me may not work for my DIL in NC. It may work even better for her. So many factors determine sourdough success. I also feel for you and your daughter with allergies. Pineapple and kiwi were my favorite fruits growing up. Almost 10 years ago I started having mouth burning issues with both. Last year I had anaphylaxis reaction from kiwi. I'm seeing an allergist soon to see what else is now off limits. God bless you and your family. ❤️
Oh my goodness Michelle!! Bummer. I have a referral to an allergist. I have had some reactions over the years. I ate a kale salad and broke out into hives all over. 🤷🏻♀️ And other things. My daughter had an allergy test 4 years ago- determined she had a whole list- avocados was in it. They never bothered her until this past week- he lips started swelling while eating one so we gave Benadryl- thank God I had just bought some earlier that week as we were out. It helped but sadly she can’t have those anymore- her test was right I guess it just took a while for her body to be fed up with it🤷🏻♀️ After doing GAPS for her she was able to tolerate so many foods in her list. But seems like now she’s having issues with some foods again. Knowing your kiwi situation we’ll have to keep her away from avocados. 😓Next reaction could be worse. Thank you for sharing that.

So discard is what you remove from your starter when you feed it. If you didn’t remove any- you would have way too much to feed- it gets imbalanced and wasteful at that point with too much starter so you use the discard in a recipe or toss it.
A podcaster I listen to freeze dries her sourdough starter and sends pieces of it out to people who subscribe to her cooking community. I thought that was a great idea.

Hi Sandy!! Thanks for hanging out. Oops I failed to mention that. I use half bread flour or fresh milled wheat and half Unbleached AP flour. The English muffins need to be cooked on low for 5 minutes each side. I turn in the skillet medium to warm it up the down to low once it’s heated well. Sometimes I cook the outside too quick and have to turn off the stove and just let them sit and finish off- then turn it back on for the next round. You will find your groove if you keep up the good work 🌻

It’s the worst and so painful when it cracks so deeply. It’s some kind of hot water related eczema. I wear dish gloves and it helps so much!! And I try to stay out the wet dough as best I can. Blisters turn to peeling skin turns to awful dry cracking patches of thin skin. 😭 Limited hand washing and hot water exposure.
Hi! I’m about 2 months in with baking with sourdough. I’ve been feeding mine everyday. Question: if I choose to refrigerate it, what’s the proper procedure? Do you use what you need, then feed it right before you put it in the fridge?
When I start my sourdough in this video- I pulled my starter from the fridge early that morning, feed it, then in the evening I make my leaven with an active starter. I feed my starter at the same time and leave it out for the night. Then I refrigerate in the morning- until I plan to use it again. Sometimes I take it directly from the fridge. Just depends how long it’s been hibernating. Sometimes I feel it needs a wake up so I’ll take it out feed it, leave out for 12 hours and refrigerate again. It’s maintenance- but less than the daily which can become wasteful if you can’t use the discard up. Hope that helps!
