I am from mumbai, i do this baath cake every year for Christmas. When we were small, my mom use to use fresh coconut, later we tried doing it with decicated coconut. We mix it before going to bed and in the morning we give it in the bakery to bake, since we do in large quantity. All my friends and neighbors love it.

I have just made this cake using another recipe and then saw your recipe. Yours was significantly different after the 8 hours and getting the Baking powder to fizz and ...oooo .. the nutmeg! It also rose better and I bet it isn't as crumbly . So I AM going to try yours....Thank you for combining the tradition with a twist - and to come up with , hopefully, an authentic taste. I shall be back!

Hi Cathy you can use the frozen grated/shredded coconut from the Indian grocery store. I have never refrigerate this batter but if you do try it, I would like to know how the cake turned out😊🎄

Tried your recipe. It turned out absolutely delicious!! Flavors of coconut, rose and green cardamom - so good. Fresh coconut is hard to get here - so I used some good quality coconut flakes. Ground the flakes with Cream of Coconut which added moisture and coconut flavor. I then reduced overall sugar as the Cream of Coconut was sweet. Recipe is a winner! Thanks for sharing.

Hi Irene, thanks for your comment, I am yet to try making the Baath with desiccated coconut. I’m sure it would work , but I would use between 100-110 grams of desiccated coconut to substitute the fresh.

Yes Cheryl, you could replace fresh coconut with desiccated coconut. But after soaking if the batter becomes too dense you can add just a little milk to thin it out.

Hi Cassie, I’m so Happy the Baath cake was such a hit. If you want to do half the quantity you could put one egg and then beat up another egg and just add half of it to the batter, or you could do 1 egg and 1 egg yolk. If you add two eggs the cake may turn out dry and hard. A Happy New Year 2022 to you and your family too. Enjoy!

Nothing should happen if you keep it in a cool place but not in the refrigerator 😊

Hi, wanted to ask if I'm trying this cake in the summers. Is it still recommended to keep it out in the night or should I refrigerate it?
If it is too hot you can refrigerate it but make sure it comes to room temperature before adding in the baking powder.
