What i often do instead is put in a ring of whole preserved green figs so the slices come out with big green wheels in them. I think Maraschino cherries work well too, but i find them a little hard to get. I always toast the nuts beforehand. I grow my own, so am very lucky... Hi Wendy your cake looks yummy will definitely have to give it a go. Have you ever used crystallised pumpkin. My mum always used it in her Christmas cakes when we lived in India (Calcutta), it gave a lovely crunchy taste to the cake. Have a lovely Christmas ❤❤
It’s delicious. In Pakistan we call it petha. Am guessing it’s called the same in India. One of my favourite treats from the sweet meat shops and I have used it in fruitcake in the past. Thank you for the reminder!

Yes, you can use them! Cook the soaked fruits until it comes to a gentle boil & take it off the heat.

Exactly how much time did it take to bake.and how many times to repeat the cherry beandy process once or twice?
It took me in total 2 hours to bake the cake. Feed it with 2 tablespoons of cherry brandy once every week right up to Christmas 🎄
