I would put few peaces of apple wood on the plate beneathe the duck. The hot air mode would cerculate the fragrant of apple wood (or oak could be another choice) into the duck.

The sweet sauce is Seafood Sweet Sauce, they are just named as 海鲜酱 or 甜酱 which is popular in Cantonese cuisine. No need to cover it with food wrap, because we want the skin to be dried. To have crispy skin, it is important to make the skin dry. It is not sticky to your fingers when you touch the skin then the skin is dry enough.
Hi Gary, hello from Australia. Thanks for the recipe! After the first 30 minutes of roasting in the oven, you rotate the rack but didn't flip over the duck onto the other side. Is it necessary to turn it to achieve an even colour on both sides?
I didn't flip it because I used hot air fan mode and put the duck on a rack, so hot air could circulate underneath the duck. The reason I rotated it was because the temperature is higher at the side near the fan. Each oven is different, You may rotate, flip, or do nothing depending on your oven. For example, if your oven is big, then rotating may not be necessary.

冇煱爐就難搞啦😅,冇乜可能係屋企室内用炭燒🤣,除非你屋企有個大天台或花園,淘宝一千元左右買個燒烤爐用炭燒,效果可能更加正。唔止燒鴨,仲可以燒乳豬,或西式燒羊髀,燒安格斯 prime ribs 添!真係諗吓都開心!😂😂😂

師傅我不敢當,我的烤箱有吹熱風功能,我把鴨子放在通風架上,熱風上下流動,所以我不翻轉乜可上下烤得均勻。如沒有熱風功能,那便可能要中途翻一下。

Chu hau sauce is just nice to have. You may simply use some oyster sauce, soy sauce, and sugar to replace it.

五香粉不同牌子有不同組合,但一般都包含花椒、八角、玉桂及丁香,要細看成份才可肯定代替那些香料。此外有些五香粉會包含更多材料如黃薑粉,這或會太多不同香味反會弄巧反拙

多謝你意見,市面食燒鴨會沾酸梅醬,小弟一向對酸梅醬味道祇係普通喜歡,所以冇研究點整。隻鴨燒完肚内有好多汁,可能用這些汁再加工如加入蜜糖再煮濃,應該可以做到不錯的沾醬,讓我再研究一下。

這純是個人喜好,但加太多香料未必是好,陈皮味頗濃有人喜愛亦有人不喜歡,甘草也是一樣,要看個人口味才決定加不加和加多少。做廣東燒鴨,加入這兩種配料是不常見,但我覺得如果喜歡加入一些亦無妨。
