  • Ingredients:
    1 duck 3.5 pounds
    Seasoning paste:
    2 tsp five spice powder
    2 tsp garlic powder
    1 tsp onion powder
    1 tsp white pepper
    1.5 tbsp sugar
    1 tbsp salt
    3 tbsp hoisin sauce
    Maltose vinegar mixture:
    2.5 cups water
    70g Chinese red vinegar
    100g maltose

    Using straws and using your fingers to work between the meat and the skin *does* work. How do you think they did it way back in the day? They weren't riding bikes in the 13th century haha

    Really wanted to try this, but there's no way in hell I have room to hang a duck in my fridge for 36 hours 😂😂 I can barely fit my familiy's necessities in the fridge as is.

      with winter here place it on the cold porch with a fan blowing on it unless you live down south.

      Use a tray with paper towels then lay the duck on a rack, same thing.

    Okay, the bike pump grabbed my attention because it is affordable. There are a bunch of other videos with these expensive air pumps that I am not going to buy. But the Bike pump is genius. I can order the maltose sugar online. I love Peking duck so much I am going to try this recipe!!!!!!

    hello , the peking duck came out close to the ducks for lunchtime in the villages - $7.75 a plate - it is not a combo order - just over rice sometimes with cabbage - the five spice soy sauce over the duck onto the rice. elle for congee

    Great video! But, @1:29, who's manning the pump? I just bought my first air pump in 40+ years. It's battery-powered and can deliver up to 150 psi - not that I need it. But, it should make it easier for me to hold the duck at both ends while it separates the skin. But, again - really great video!

    What did you use to hook the double-hook onto the top of the fridge? This looks so good, I want to try it.

      I bought an adhesive ceiling hook and stuck it to the top of my fridge and hung the double hook from it

      I actually just bended one of those straight hooks and place a fork at the top to hold it. It was incredibly delicious!! 😊

    Another Golden? 🐕 So I’m watching vids because Ive only cooked wild duck I’ve hunted on the Weber grill using the indirect method. I watched The Healthy Butcher then this, because I love Peking duck, and what do you know. This video has a Golden Retriever in the background too. Think I can go 3 for 3?

    I'm making this with no drying in the fridge, I just straight up let it dry on the counter slightly after the bath. It's now in the oven, I'll let yall know 😂

      @@lilianaroman8402 thanks for the reminding me, I literally forgot. The skin was not crunchy but the flavor was deliciously sweet, the texture was soft perfectly through. I enjoyed it without the crunch.

    I just like to eat roast duck meat with 1. steam white rice, 2. braised mustard vegetables (Choy Keok), 3. Steam Chinese Herbs with 1 chicken carcass, chicken feet (4 cut half), gizzards (6 pcs) soup 4. Steam Custard Egg with chopped green onion, fried garlic & oil, 2 tbsp light soy sauce. A great dinner set meal for the entire family

    What temp is your fridge? Mine is set at 34 F and could freeze the exposed skin

      From what I've seen you want it 45-48 degrees and if you can put a small fan in there even better

    You season the inside of the duck but how about the outside. I’ve watched countless videos and nobody puts any seasoning on the skin. Would it be tasteless then?

      I would say no, because maltose is not sweet and more like a soy sauce type of sticky thing.

      If you have one of those standing paper towel holders you can probably just insert it into the cavity of the bird and stand it upright in the fridge.
