I tried it. But had to use some substitution. No shallots so I used spring onion. No rose wine so I used Zhao Hing wine. Red vinegar was substituted with Ordinary white vinegar. I used Mi portable digital tyre pump to pump air into duck😂😂. Father ate it and complained that he was putting on weight ( and meanwhile took another two pieces...)
Tried it on chicken first and the result was amazing - CRISPY roast outside, MOIST & JUICY inside. Will do the same with DUCK for V-DAY (Valentine's Day).:-)

At some point, it looked like the skin would be very crispy but by the time we carved it and served it, only the leg skins remained crispy.. Maybe because I wasn't able to blow enough air? We didn't have air compressor but modified one of those airbed blowers. Not complaining though - everyone in the family thought the duck was excellent. I will do it again until I achieve that crispy skin. Thank you again! Happy Year of the Ox :-)

Look within the cooking process not to introduce elements that promote intoxication, among them putting aluminum, teflon. You have beautiful ceramic and enamelled cast iron pans, so how about leaving the aluminum (and teflon when cooking animal protein) out of your kitchen and if you need to, replace it with vegetable paper or nonstick for cooking. Meals without intoxication is very good.

I’m prepping for it now and I can’t get the skin to separate from the muscles with the compressor. How are you guys able to get the skin to separate so easily? I don’t get it. Unless you are just blowing the air directly into the duck and not in between the skin and the muscles?
My parents want a whole duck, the head, neck and feet. Does this change the amount of ingredients used and the cooking time? ( My parents came from generation where nothing was wasted, every body part that was edible was eaten)

If you don’t have anything the handle of the spoon can help to separate the meat from the skin.

Traditionally Chinese people like to use a whole duck, but you could replace them with duck breasts as well. 😊
