    The only part I would like to know is, After you flip it, you said to bake it for 30 minutes but your screen showed to bake it for 20 minutes. Which one is it?

    Thanks. Use hand to in lieu of air to separate the skin from the body if no air compressor. I saw it done on RUclips. Is this ok too?

    I tried it. But had to use some substitution. No shallots so I used spring onion. No rose wine so I used Zhao Hing wine. Red vinegar was substituted with Ordinary white vinegar. I used Mi portable digital tyre pump to pump air into duck😂😂.
    Father ate it and complained that he was putting on weight ( and meanwhile took another two pieces...)

    Tried it on chicken first and the result was amazing - CRISPY roast outside, MOIST & JUICY inside. Will do the same with DUCK for V-DAY (Valentine's Day).:-)

    Question: after you marinated the duck with salt and other spices you wash that off by pouring hot water on it. Would the skin have no flavor because of this?

    I just put my duck in the fridge for tomorrow. Happy Thanksgiving to you and your family, I’m making an escarole giblet salad and stir fry cauliflower and broccoli for sides. My wife is from Hong Kong 🇭🇰 so I wanted to make your recipe. I bought an air compressor and all the ingredients.

    I am trying your recipe for roasting tomorrow. The duck is now in the fridge and will have 24 hours of drying. Mine didn't look deflated as yours though. So wish me luck.

      @@CiCiLi Update - the duck tasted very good, moist and tender. At some point, it looked like the skin would be very crispy but by the time we carved it and served it, only the leg skins remained crispy.. Maybe because I wasn't able to blow enough air? We didn't have air compressor but modified one of those airbed blowers. Not complaining though - everyone in the family thought the duck was excellent. I will do it again until I achieve that crispy skin. Thank you again! Happy Year of the Ox :-)

    My dear, your duck recipe is beautiful! Thank you so much for her. I can't use the pressurizer here, but I'm going to think of something about it. I would love to tell you about an important orientation for the art of making food and I will talk about this, because I work with detoxification in the area of health and complications are greater than we can imagine, we need years of study to understand and we do not always have how to solve all, but some things are simple and so I point out, after all we eat and love to eat! Look within the cooking process not to introduce elements that promote intoxication, among them putting aluminum, teflon. You have beautiful ceramic and enamelled cast iron pans, so how about leaving the aluminum (and teflon when cooking animal protein) out of your kitchen and if you need to, replace it with vegetable paper or nonstick for cooking. Meals without intoxication is very good.

    W0w, I wish I had the money to buy all the ingredients to do that. It's looks s0 delicious that my mouth watered just looking at it. My Noa' used to coerce me to cook growing up. I told her if she buys me a duck. I'll make that before I do another turkey for the holidays. Never thought she'd take me up on it. She did. An now I'm making it a point to roast one every year. 😋 She don't like duck. Maybe when I make it like this. She will;)!

      Traditionally Chinese people like to use a whole duck, but you could replace them with duck breasts as well. 😊

    Next time i have a free month with nothing to do I am going to make this. Or maybe I'll just go buy one at the Chinese BBQ Shop and save myself 29 days 23 hours..... for the same results.
    Just kidding. Your instructional was very well done because you included abundant visual and verbal details. This is the most comprehensive recipe with respect to ingredients that i have seen so far.Red fermented bean curd and the red vinegar surprised me. I like the authenticity aspect so want to thank you and let you know your efforts are appreciated. Well, times a wasting so i am off to the BBQ shop to get my duck. Lol

      emoc 666, I also heard that you could just simply use your hands to separate the duck’s skin and the meat. It's not traditional but doable. :)

    Hi, i dont have rose vinegar and maltose. Can i substitute it with white vinegar and honey with red food coloring? I hope you answer me. Thanks in advance

    I’m prepping for it now and I can’t get the skin to separate from the muscles with the compressor. How are you guys able to get the skin to separate so easily? I don’t get it. Unless you are just blowing the air directly into the duck and not in between the skin and the muscles?

    My parents want a whole duck, the head, neck and feet. Does this change the amount of ingredients used and the cooking time? ( My parents came from generation where nothing was wasted, every body part that was edible was eaten)
