風乾一晚的鴨皮完全唔夠乾,第一次整時完全無燒鴨的脆皮。
但個醬較得好完美
用網格放雪櫃會壓到鴨身有深坑,用氣球泵打氣係好難打返脹。
建議用繩綁住鴨肋周腋下位吊起,吊半日後再用風筒吹。
熱水同糖醋水可一齊煮熱一齊上,覺得會方便D。
焗爐每個型號時火力唔同,只跟影片會唔夠熟。
睇嚟不太複雜,值得一試!🙏🙏

香料盐:盐 30g、糖 20g、鸡粉 5g、桂皮 一片、陈皮 一片、花椒 1g、丁香 少许、八角 1颗。
混合酱料:柱侯酱 20g、海鲜酱 20g、面豉酱
20g、蚝油 40g、南乳 20g、生抽 12g、烧酒 10g。
脆皮水:红醋 5g、白醋 15g、麦芽糖 3g、米酒5g。
Hi Chu sir, Thank you so much for the recipe. I tried it, and my husband loved it. He is a very picky eater. We used to go to a restaurant where served ducks, and every time we went, the only dish my husband ordered was the Peking duck. Later we stopped going because they required place the order ahead. Actually, the duck I made was better than the duck he used to have at the restaurant he said. I felt great because of you. Thank you again!!!
