    Ingredients Needed:
    Chinese Mandarin Pancakes:
    2 cups (300g) all purpose flour
    1 cup (237ml) water
    1 tablespoon (11g) sesame oil
    Honey Plum Sauce:
    1 lb (16oz) fresh plums, pitted & chopped w/ skin
    1/4 cup (59ml) rice vinegar
    1/4 cup (58g) sugar
    2 tablespoons (38g) honey
    2 tablespoons (30ml) shaoxing wine
    1/4 cup (52g) sriracha
    2 tablespoons (26g) dark soy sauce
    Five Spice Sichuan Seasoning:
    4 tablespoons (72g) kosher salt
    2.5 tablespoons (31g) granulated sugar
    1 tablespoon (5g) Chinese five spice
    1.5 teaspoons (6g) Sichuan peppercorn powder
    Maltose Glaze:
    3 tablespoons (45ml) shaoxing wine
    1/4 cup (86g) maltose
    2 tablespoons (24g) Chinese red vinegar
    1 tablespoon (12g) Chinese black vinegar
    2 cups (473ml) water
    To Serve:
    1/2 cucumber, very finely julienned
    1 bunch of green onions, ultra fine julienne
    Optional 1 cup pickled carrots

    As someone who's from the same city as Peking duck, the seasoning is not what restaurants in Beijing use, the sauce is usually tianmianjiang (a sweet, soy bean paste based sauce), and the pancakes are usually steamed. But the methodologies are on point and it looks delicious!! Tip: try dipping the crispy duck skin in granulated sugar!

      As someone living in China now, I hate when people pronounce it Peking and not Beijing. Damn you Wade-Giles and your ridiculous pronunciation system. And you pointed out all the things I wanted to mention: the sauce is wrong; the wraps should be steamed, paper thin, and nearly see-through; and there's no granulated sugar. Also I've never seen Beijing duck served with carrot in China. I think this would be a good addition, but I haven't had it yet (and I've eaten Beijing duck quite a lot. lol).

      @@leecarter2356 grew up In Beijing we definitely dip the crispy skin pieces in sugar (I'm not personally a fan because I prefer savory food ). Some restaurants will slice off skin separately (more high end places I suppose lol bougey)

      @@theBoringL yeah i usually dip a piece in sugar and then a piece in sauce and add them both to my little wrap. I've been to a few places where the skin is served separately, but only some of the skin. Also I noticed the duck is sliced a lot thinner at good restaurants so that the chef can show off their knife-skill.

    The Chinese rice pancakes are actually steamed believe it or not. Its also so thin that its translucent. Either way, great video Joshua! Love that you are sharing chinese recipes to your audience

    as a honger konger, peking duck is always served with cucumber, scallions, and hoisin sauce (i’ve seen it served differently in several regions of china but this is my experience in HK). the pancakes are also so thin you can see your finger through it. this is a nice starter recipe but if you’re short on time a good store bought hoisin is not an untraditional replacement. my only critique is that josh’s pancakes are too thick. otherwise this is an amazing recipe for people wanting to switch up their holiday roast bird :)

    As someone who grew up and lived in Beijing for 15 years I’m so excited to see this video, it brings back so much nostalgia, so thank you. Inflating air between skin and meat is literally on point, haven’t seen many people done it correctly, bravo! But typically no seasoning is used on the duck itself, it’s supposed to be bland. As for the dipping sauce in the wrap itself, we use Tianmianjiang, something most people / restaurants just purchase instead of making. And the plum sauce is good, but it’s usually done for the skin itself, more often tho, granulated sugar is used for skin - it’s the most wonderful combo of sweet and fatty. And I have never seen carrots for Peking duck, but why not!

    We often used an air compressor at my old job instead of a bike pump, for 1 or 2 ducks it’s not an issue but when you’re doing 10-15 a day it’s a huge timesaver. We would brine for 2 days, then pump, then wash in water/rice wine vinegar solution, then wash in water/maltose solution. Then air dry it in a fridge for 2 days before cooking.
    If I can add a tip: get someone to pump for you. If you have a firm hold on the open cavity and the skin around the neck (which requires 2 hands) and have someone else pump, you’ll get good separation across the entire duck with a lot less pumping. You want to make sure you trap the air as best as possible.

    I'm from Beijing, the Peking Duck is definately not something you want to cook at home, so I'm so impressed by Joshua. Although this recepe is not the most authentic, but I'm glad Joshua can introduce this dish of my hometown food to the west.

    My mom has always been against breaking tradition and my family always ends up with the same dry turkey and boring casseroles invented in the 50s. I finally convinced her last year to let me be in charge of the food for the holidays. I bought the popeyes turkey and made appropriate southern style sides for thanksgiving, and then i did this peking duck recipe for christmas. Both were a huge hit with the family 😂

    The way you cut up duck is the same way many roast meat sellers do it in my country too haha. One added thing. Having tried my fair share of Peking Duck in the motherland, one of the best things ever is the leftover carcass. Most high end restaurants will ask you what you wish for them to do with it after they carved the duck up tableside. When I bought 2 ducks for my table, I had one carcass be chopped and deep-fried, served with plum sugar. The other, well. I had them make it into a soup. Which was fucking divine.

    Josh I love you and I think you are the king of bread. and i love the fact that on your channel, we can learn so many different cuisines because you are super cultured! I am chinese but i do love the duck with plum sauce even tho it is not the most traditional choice (i also love that). The only different thing is that we have that tortilla thing super super thin (almost transparent). In restaurant style Peking duck, the chef normally slices the duck for us so we have it without the bone. Bones are used to make soup to go with the dish. Ahhhh I love peking duck so much. Thank you for sharing a considerably easier way to make this at home!

    I just want to say that the hot water in the beginning doesn't render the fat out. It scalds the skin and similar to how your skin feels if you burn yourself with boiling water. It tightens it up.

    I just recently found your channel and have to say i love it. My husband can tell you that I'm not a very good cook but I'm still trying. We live in an rv and the oven does not work so everything has to be stovetop. He does not like anything microwaved. I did buy a bread maker and that has worked out well.     I would recommend hoisin sauce (homemade is probably best but store bought is fine) with the duck. And picked carrots/Daikin/cucumber really enhances it

    Not bad. Depending on where you are in China there are some different sauces, as other people have mentioned either a sweet bean or hoisin sauce.
    My grandmother would test the bread thickness by putting a piece over a newspaper. And if you couldn’t read the newspaper you didn’t make your bread thin enough. A nice tip to get it thinner is to layer more than two together. sometimes my family will layer four or five, it takes a lot of skill to roll them out together but you can get very thin wrappers very easily. And we do pan fry hours instead of steaming because we’re from Northwest China. But yeah most people steam the wrappers.

    Hi Joshua! I like your videos a lot and tried to cook several dishes after watching myself. One thing caught my attention, you use tin foil and plastic wrappers a lot. Maybe, on account of sustainability you could consider using zip-bags, tupper ware or something re-usable in the future? I’m pretty sure, those eco-friendly material are still okay for resting dough and such.
    Also: I didn’t have plums available (it’s winter in Germany) and used pomegranate as fruity base for your sauce. Turned out very nice.

    We do ham for Christmas. I always do Turkey breast in the rotisserie when we have turkey, be it for a holiday meal or a just because I feel like making turkey for a family Sunday dinner! It always comes out of rotisserie very juicy!

    This is an interesting recipe. You kinda took the cantonese roast duck and used it in the form of Peking Duck. The sauce should be hoisin not plum, and carrots are a nono. Also, the pancakes should be EXTREMELY thin and steamed. It’s a unique recipe that I’m sure is amazing, but it’s not peking duck. :')

    You see, I have a problem. My sister hates all fish, my mother hates all birds.     though its not 100% the same, but i usually just buy a whole roast duck from a reputable chinese roast bbq meat restaurant, cut it up and serve. effort vs reward is too much to roast your own duck

    in Austria we differentiate between pancakes (Pfannkuchen) - and Palatschinken, which look like yours or in Germany they're called crepes.

    Traditionel here in Denmark to server a pork roast AND duck, with regular boiled potatoes and / or "Brown potatoes" its small potatoes whos been roasted on a pan with sugar and butter.
    Best moment of christmas is the damn feast and u get to eat til u burst

    This is one of my favorite dishes. Way better than any expensive steak or sushi. If you're doing this at home and looking for shortcuts: phylo dough is a good pancake substitute, duck breast is way easier to prep, always slice your veggies properly (it's worth it), buy extra plums and use them for sweet bread.

    Its end of 2024 and im making this. I bought duck in Turkey for new years eve thinking i can cook it the french way but this recipe much better. And im glad someone else thought to cook duck for the new years eve

    the technique is on point however final product looks like a regular roast duck rather than a Beijing duck or Guangzhou roast duck. A Beijing duck usually have glass like crispy fatty golden skin, goes well with cucumber and hoisin sauce. And I believe the palm sauce use a different fruit called Ume,and it’s very sweet and sticky, semi transparent golden sauce. Anyway, good work

    Beautiful. I spent $300 on 4 Peking ducks this past Christmas 😌. Took the fam out to eat. Full bill was $650. Was worth it. Very expensive for me but worth it

    My wife and I just returned from a restaurant who has been known for peking duck for 30 years. For unspecified reasons this dish fell out of the WTF menu ?! We've been talking about this duck for a week, how much we want to eat it and unfortunately a big disappointment that I have to fix myself and at the weekend I will give my wife a duck, which I will prepare myself according to your recipe. On Wednesday, farmers from nearby villages come to town with goods and I will buy a duck there. wish me luck! Josh, thanks for being my inspiration.

    Quick tip, the boiling water should be mixed with vinegar, maltose and some red food colouring to give the duck a more red colour
