The author of the story was from Griffith, Indiana - one city over - and Cam Lan was hugely popular. Excellent food, great prices. We used to eat there all the time until we moved. Didn't realize the connection until right before then. The staff was always very nice and did speak with very thick accents. Wish I could go back!
I can eat chicken feet just fine, but why do people enjoy such little meat to bone ratio? Genuinely curious. Eating around the bone can be kind of a pain too, like with pork trotters or fish bones. E: Duck liver I don't get either. It's got a sort of grainy, earthy paste taste to it. Probably just a personal taste preference thing, I guess.

I'm currently working at a Chinese restaurant that serves Peking Duck and I've got to say, that's almost pretty spot on to what my boss does. He does do the same method of using a tube to separate the skin and the meat. However his coating is very different and it gives a rather orange color. The hoisin sauce that we get comes in a can and I usually make sure that's ready to go. The pancakes are also pre packaged and we usually steam it. Also, I saw that you cut up some cucumber and green onion which we also do lol. So great job man. The Peking Duck you have looks pretty good. I hope one day to cook it and eat it lol. Thanks man.
Two years in a row for Christmas my dad bought a Chinese duck like the one in the movie and brought it to my uncle’s house. We’d put on the movie and when that scene came on he’d pull the duck out and then chop it’s head off. They were good Christmases. My family’s Asian by the way.
That sounds like an awesome semi-tradition. My family did something similar. My aunt liked to cook and bake (the way Babish does) and for a few years in a row at Christmas, she'd make us grandkids our own Willy Wonka chocolate bars with the paper wrapping and golden tickets. She went all out, and then we'd watch the original Willy Wonka movie and when it came time for Charlie to find the golden ticket, we'd eat our home made chocolate bars. I love being able to enjoy the iconic treats & foods from movies while watching the movie

in hong kong, we carve the duck skin with less meat, and we will use the duck meat thats left to make fried minced duck meat (fried with garlic and tonnes of other delicious shit)

For the people who are complaining about people saying this isn’t a genuine take on the dish, that’s fine. No one said it had to be the exact method of cooking, and frankly I’m impressed that he managed to get something as close as possible without arguably the proper methods of cooking it. And no doubt that this way is more favourable to people who may not be familiar with Chinese cooking, as it’s evidently lighter in skin and meat, while most you see cooked in Chinese restaurants are brown dark skin and sort of a dark grey tone to the meat. I mean most chefs actually manually blow down the mouth and neck of the duck to actually inflate it, and the roasting is done in a high heat oven, but older Chinese people with a large home and are dedicated to doing it traditionally even sometimes have a drum barrel repurposed as an oven for cooking Peking Duck, they build a fire under it and hang roast it.
I think the criticism comes from the fact that he took the time to get the air compressor out, and made a big deal about roasting and grounding the spices fresh, but yet, he didn't get the basic ingredients such as sesame paste, fermented black bean paste (to name a few) to make the sauce. Totally get that he wouldn't be able to air dry and roast it properly as a home cook. The air drying and brining process is labor intensive and no one expects him to go the extra mile for that. But the ingredients are something that he could've easily gotten correctly since it's so accessible to his location. If he said he altered the recipe according to his own taste, then maybe he wouldn't have gotten so much of that. Just my observation, though. It was still a cool video, and yeah, pulling out that air compressor and making that the main focus of this video certainly make it look fun and exciting. :)
I agree! I actually got better results browning in a regular roast rack than hanging, though I think I was basting too much while it hung, reducing the temp. The rack was called in after the duck fell off the hooks into the drippings pan like a hydrogen bomb haha. Next time i’ll try the blow technique.
In asia we eat peking duck with the skin and meat separate. The waiter will carve the skin and serve it with the pancakes, cucumber and hoisin sauce; and the meat is stir fried and served later based on your choice of style. Is it different in the western world?
In the West both meat and skin are eaten with pancakes, then the duck carcass is taken back to the kitchen and the vety little meat attached to the bones is used to make fried rice and the bones are used to make soup. Westerners cannot wrap their heads around the fact that Chinese people treasure the duck skin so much. They most order Peking duck to eat the meat.
Im sorry and i hate to be this person but my strong passion for peking duck and my inner Chinese just can’t let it slide, peking duck is suppose to be just the crispy skin of the duck (carved out) and the meat can be made into another dish. And If we want to get extremely authentic Chinese the sauce is a sweet syrup like sauce with salt on the side to dip. But hey great video!!!! Love it!!!

A major discrepancy: the pancake suppose to be super thin, two layered and steamed, so it’s super tender and transparent enough to read through. You could try it at Decoy since you live in NYC

@Lil smackaroo I'm not sure how to describe the flavour of something. It's "meatier" than chicken or turkey, that is it has a fuller flavour. It is greasier which is where that flavour comes from. The skin is also cooked crispy and its served with these pancake like things. It's really tasty

Pro tip: marinate overnight for the tender and chicken like texture. Serve with a salty component to the duck (my family and many others uses a special sauce that I can’t quite remember the name of), and maybe a crunch like cucumbers or (my favorite) green onions.
Fun fact: I used to live close to where the first Peking duck restaurant was. They apparently invented Peking duck there, (yes I'm also Asian.) also Peking duck is called 烤鸭 in Chinese which means roast duck. Quite interesting stuff!

I remember when I lived in China there was a restaurant in Beijing run by Buddhist monks and they made THE BEST vegan version of this. I realize that vegan Peking duck makes no sense, but they made it make sense. I made this yesterday and it ended up looking and tasting AMAZING. The whole process was a HUGE mess and I had to improvise since I didn't have a wok, ladle or any type of air pump, plus, I accidentally purchased a headless duck. With the help of my girlfriend, somehow, we made it work! Thanks Andrew!
The dipping sauce base for Pk duck is NOT Hoisin sauce. It should be Sweet Bean Paste (Or Tian Mian Jiang, a sauce often used in Northern Chinese cuisines). Hoisin sauce (or seafood sauce), on the other hand, is a sauce that's more often used in Southern Chinese cuisines.
Owners of my favorite Chines restaurant retired a few years ago, but every Sunday they'd make some of these same Peking Duck tacos with the hoisin and the scallions and cuke and do I miss those (and them). So delicious! Thanks for the happy memory, man.
Traditionally, you don't eat the meat with the wrap. You use only the crispy skin while the meat is used for other dishes like fried noodles! I love sweet plum sauce with my Peking duck.
Im a barbarous woman, I just dig into the thing with rice and we split the duck and divvy the meat up. Noodles can be served alongside it but maybe I just like the gentle flavor of duck and rice. Nobody says no to roast duck and rice...
Chinese sesame paste. Chinese sesame paste uses roasted sesame seeds. tahini uses raw sesame seeds, so the taste is different. however, a caveat is that some Chinese sesame pastes use peanut oil or may contain traces of peanuts, so you may need to make your own. just toast some white sesame seeds (you may need to wash them beforehand though) in a pan (dry, no oil) until they are a golden colour, and process in a food processor adding small amounts of oil (avocado oil is a good neutral oil) until you get a paste (you can always add a little sesame oil for an added kick of sesame, but check for traces of peanuts first). hope that helps somewhat; if not, you can always google :)
I've used almond butter in the place of peanut butter in various recipes and it's worked about the same, fwiw. You'll have to make sure it isn't made with peanut oil though.
they can't use peanut products at all. they have a family member who could potentially die from a peanut allergy, so peanut paste and peanut butter are no different in their case.

There are a few things that are kind of wrong during the making First the pancakes are steamed not toasted Secondly the sauce to put everything togeather in the end is sweet sauce (im not sure what the ingredients are but its definitely not what was put in there) But im not here to criticise just traditional accuracy. In asia we eat peking duck with the skin and meat separate. The waiter will carve the skin and serve it with the pancakes, cucumber and hoisin sauce; and the meat is stir fried and served later based on your choice of style. Is it different in the western world?

In the West both meat and skin are eaten with pancakes, then the duck carcass is taken back to the kitchen and the vety little meat attached to the bones is used to make fried rice and the bones are used to make soup. Westerners cannot wrap their heads around the fact that Chinese people treasure the duck skin so much. They most order Peking duck to eat the meat.

Have to cut the skin, trim the fat on the skin, and serve in the SOMS (Skin, Onion, Meat, Sauce) order on the pancake then fold

@Lil smackaroo I'm not sure how to describe the flavour of something. It's "meatier" than chicken or turkey, that is it has a fuller flavour. It is greasier which is where that flavour comes from. The skin is also cooked crispy and its served with these pancake like things. It's really tasty

Pro tip: marinate overnight for the tender and chicken like texture. Serve with a salty component to the duck (my family and many others uses a special sauce that I can’t quite remember the name of), and maybe a crunch like cucumbers or (my favorite) green onions.

Fun fact: I used to live close to where the first Peking duck restaurant was. They apparently invented Peking duck there, (yes I'm also Asian.) also Peking duck is called 烤鸭 in Chinese which means roast duck. Quite interesting stuff!
The full name is 北京烤鸭! Basically means Beijing Roast Duck (Peking in the name basically being a really strange romanized version of Beijing)

I remember when I lived in China there was a restaurant in Beijing run by Buddhist monks and they made THE BEST vegan version of this. I realize that vegan Peking duck makes no sense, but they made it make sense. When I saw the part at the end where everything came together, I totally remembered that restaurant and those thin strips of veggies! Oh man, good memories!! Thanks for the reminder!!!!!

I made this yesterday and it ended up looking and tasting AMAZING. The whole process was a HUGE mess and I had to improvise since I didn't have a wok, ladle or any type of air pump, plus, I accidentally purchased a headless duck. With the help of my girlfriend, somehow, we made it work! Thanks Andrew!

The dipping sauce base for Pk duck is NOT Hoisin sauce. It should be Sweet Bean Paste (Or Tian Mian Jiang, a sauce often used in Northern Chinese cuisines). Hoisin sauce (or seafood sauce), on the other hand, is a sauce that's more often used in Southern Chinese cuisines.

Traditionally, you don't eat the meat with the wrap. You use only the crispy skin while the meat is used for other dishes like fried noodles! I love sweet plum sauce with my Peking duck.

Im a barbarous woman, I just dig into the thing with rice and we split the duck and divvy the meat up. Noodles can be served alongside it but maybe I just like the gentle flavor of duck and rice. Nobody says no to roast duck and rice...

What could i substitute for peanut butter? Got to cook around a family members peanut anaphylaxis.
Maybe tahini? It's very similar to peanut butter and is made with sesame seeds
Chinese sesame paste. Chinese sesame paste uses roasted sesame seeds. tahini uses raw sesame seeds, so the taste is different. however, a caveat is that some Chinese sesame pastes use peanut oil or may contain traces of peanuts, so you may need to make your own. just toast some white sesame seeds (you may need to wash them beforehand though) in a pan (dry, no oil) until they are a golden colour, and process in a food processor adding small amounts of oil (avocado oil is a good neutral oil) until you get a paste (you can always add a little sesame oil for an added kick of sesame, but check for traces of peanuts first). hope that helps somewhat; if not, you can always google :)

I've used almond butter in the place of peanut butter in various recipes and it's worked about the same, fwiw. You'll have to make sure it isn't made with peanut oil though.
they can't use peanut products at all. they have a family member who could potentially die from a peanut allergy, so peanut paste and peanut butter are no different in their case.

There are a few things that are kind of wrong during the making
First the pancakes are steamed not toasted
Secondly the sauce to put everything togeather in the end is sweet sauce (im not sure what the ingredients are but its definitely not what was put in there)
But im not here to criticise just traditional accuracy. Also love your videos keep it up.
