      To be honest, we don't live in Beijing and it's impossible to get Peking white feather duck to make authentic Peking duck, so the first choice is to choose local meat duck from the ingredients. In addition, the production method is also simplified, eliminating the need to blow the skin of the duck, because the tool is not easy to find (in fact, blowing or not blowing the skin is 90% and 95% of the difference in the final taste of the roast duck, not senior gourmets basically can not eat). Finally the condiments we also did not use maltose to brush the skin, nor did we use red vinegar ...... so we can only take local ingredients as close as possible!
